| Here's one recipe I have on file. I don't know if I've made this version before, but I think the cooking time looks a little short. That may be fine if the cookies will be eaten within a few hours though. FLAVORED MERINGUE COOKIES 4 egg whites, at room temperature 1/2 tsp. mint (vanilla or any flavor extract) 1/2 c. Splenda granulated sugar 3 drops food coloring (green for mint, red for strawberry etc.) 1/2 c. chopped nuts - optional Combine egg whites and flavor extract beat until frothy. Gradually add Splenda, 1/3 at a time, beating until glossy and stiff peaks form. Beat in food coloring. Do not underbeat. Fold nuts into meringue. Drop meringue by rounded teaspoonfuls onto buttered cookie sheets. Bake at 200 degrees for 1 hour or until dry and set. Cookies should not brown.
