Would it be possible to use oatmeal and make a flour out of it, instead of using the other types of flour?? Almond, soy, etc??? Or even use pecans for flour or walnuts?

I think it will depend on where you're trying to substitute it - cakes may be different than coatings, for example!
Oat will be higher carb than the nut flours.
I use a variety of nuts, ground up - I keep ground almonds and ground pecans in the freezer all the time, and sometimes use walnuts or hazelnuts in place of flour - they make a WONDERFUL crust for the low carb cheesecakes!
I also use the nut flours in place of regular flour to coat meats and veggies that I want to fry or oven-fry.
Another option is ground pork rinds - they're also wonderful for coating meats and veggies for the same purpose.
