| I tried a recipe for a LC brownie. I used Splenda as sweetener. I wasn't quite pleased with the taste - does Splenda just not work for baking with cocoa/unsweetened chocolate? What other sweeteners can I use without creating a by-taste. I love Splenda in everything else. I won't use Saccharin or Aspartame. Does Stevia work well for baking? What else can I use? ![]() Thanks for all your help Never give up! Never surrender! Katrin |

| Have you tried adjusting the amount of Splenda indicated in the recipe? Ex: If it calls for 1/2 cup, start with a little less, and end up with a little more as necessary... (296/226.5/135) 04/01/03 The Downward Spiral Begins |

| I used the same amount it asked for, however I added almond nutmeal in addition to the baking mix (added about 1/3 cup is all). The brownies weren't overly sweet - but it tasted "funky". I used the granular Splenda. Are the packets maybe better? Never give up! Never surrender! Katrin |

| Frankly, I would suspect your chocolate. What brand did you use? If it was Bakers, then you can count on bad results with LC baking. I prefer Hersheys. I know a lot of folks use fancier chocolates, but I don't have access to them here. I prefer to use Splenda packets with SteviaPlus, btw. Blessings! | >>to the baking mix<< and, what did you use for the baking mix? The Atkins Bake Mix I bought last spring definitely tasted ... well, funky is about the nicest thing you could say about it. ~~~Teelbee 174 (Mar. 2002, highest weight), 164 (Jan. 2003, begin LC) 164/135/137-134 remember, amateurs built the Ark, professionals built the Titanic |

| I did use Baker's chocolate, so I guess I'll better use a different kind then. The baking mix I used was from Carbsense. I've had pretty good results with it so far. What ratio do I need when using Stevia & Splenda together? Thanks so much for all your kind hints & tips! Never give up! Never surrender! Katrin |

| Does Stevia have a very bitter taste to you? If so, then just start with a light sprinkle.. If it's not bitter, Sharron's the person to ask. It's very bitter to me, so I can't use anywhere near the quantity specified in any recipe. (296/226.5/135) 04/01/03 The Downward Spiral Begins |

| Different stevias work differently. I use SteviaPlus http://store.wellsfargoestore.com/st...&l=SharronLong That is the link. If you know the sweetness ratio of your stevia, that will help a lot. Many companies put this information on their packages and websites. I use about 2/3 sweetness SteviaPlus to 1/3 sweetness Splenda. I have the conversions all spelled out in my book, which is still available from the link above, btw. hth Blessings!
