I used to love going to Baker's Square for breakfast, and getting their Farmer's Skillet - here's my version of it:

1/2 medium rutabaga (approx. 10 carbs)
1/2 small onion (approx. 3 carbs_
2 sl. reduced sodium bacon (0 carbs)
4 large eggs (2 carbs)
cracked pepper to taste (0 carbs)
seasoning salt to taste (0 carbs)
1/4c. shredded sharp cheddar (less than 1 carb)

Peel, chop, and boil rutabaga until almost cooked through. Drain, and leave sit for 5 mins to get rid of as much excess water as possible. Slice into pieces the size of american fries.

Cut bacon into small pieces, chop onion. Start cooking bacon - when bacon starts to shrink, and there's enough grease, add onion. Cook until almost cooked through; remove from heat.

Add sliced rutabaga to hot bacon grease, and fry until it just begins to brown. Add onions, bacon, seasoning salt, and cracked pepper. Fry until browned, and bacon is crispy.

Turn heat to low, crack eggs on top of skillet mixture, poke whites, and move them around a little bit to aid in cooking, and cover until set (poking more if necessary).

Once eggs are desired doneness, sprinkle with shredded cheddar cheese, and cover until melted.

Serve with sour cream, or without.

Servings: 2
Net Carbs: Approx. 6.5

I'll try it this weekend with a kolrobi instead of the rutabaga. I happen to have one of those

Hmmm... that has me thinking. Has anyone ever tried to make turnip hash browns. Or something like a potato cake? Any ideas?

I'm not big on the taste of turnips (actually, have successfully avoided them since the age of 10), but I plan on trying to make hashbrowns with the rutabaga - not going to boil it first; just fry them. If it works, they'll be a staple in my omelettes with cheese.
