    Does anyone have a recipe for mock noodles. I saw it mentioned on another low carb webpage, but they didn't give the recipe and I couldn't find one either.

    Would be nice if someone would post one.

    Love my noodles and have really missed having them.

    MarcieLynn has a method of making noodles with zuchinni. Marcie won't be available for a few days, but basically her method goes something like this:

    Slice strips of zuchinni really thin with a vegetable peeler. Next, slightly cook them in the microwave. Press excess moisture out with papertowels. Add to recipe at the end of cooking time. Enjoy!

    While Marcie's method is terrific, I prefer to make my "noodles" out of thin strips of cabbage. I've never been one for anything that takes more than one step!

    Just take a head of cabbage, and slice it on the grain so you have long ribbons of cabbage. Break them apart as you add them to about an inch or so of water in the bottom of a pot. Fill up the pot and cover it. Cook them until they are very tender, like noodles -- about 8 - 10 minutes. Drain the cabbage noodles thoroughly.

    If we are having them plain, I just add butter and season them with lemon pepper and seasoning salt. Otherwise you can pour your favorite sauce over them.

    My favorite has always been spagetti squash. Cut down the middle, steam or microwave until you can scrape the strands with a fork. Put sauce on them and it is just like al dente (sp).

    You know me. I don't cook, so everything's got to be really easy, BUT

    There are "julienne" peelers out here. Oxo makes one, and there are some other brands. It looks like a wide peeler but makes nice little "noodle" strips with each stroke.

    AND

    for the gadget minded, there's the "Spirooli," one of those "as seen on TV" things. It looks somewhat like an old fashioned table-top apple peeler. You insert a veggie, turn the crank, and voila'!! Makes long julienne noodles, curly-Q's, either narrow or wide (like curly fries), little c-shaped slices. Comes with three blades. It's a hoot, and makes veggie noodles of all types a snap. Anyone with kids would enjoy this gadget.

    That thing sounds like a hoot!

    I wonder if my apple peeler corer slicer from Pampered Chef would do the same thing?
