    I know we had a long discussion last year when i got my French press.... but lately i've been firing up the espresso machine - But i have totally forgotten which *milk* is the best for frothing.

    I know Marcie could help on this one... Bren? you're a coffee junky too.

    Yesterday I tried H&H and it flattened in about 5 seconds

    DH says he sees Starbucks use Whole milk

    what's the best for us LC'ers?

    My dh uses whole milk, but I wonder if heavy cream would work too!

    Yes, Starbucks uses full fat unless you ask for skim or non-fat. However, I was told by one of the barristas a long time ago that the less fat, the better the foam. So I think you have to compromise wherever you are comfortable, balancing between foam and carbs.

    Like whipping egg whites, fat (bits of egg yolk or oily residue in the bowl), will reduce the volume of the whites. Same goes for milk, less fat...more volume.

    Speaking as a former barista here...you will get the longest lasting foam from skim milk, but if you have technique, you can get heavy cream to hold a good froth, too.

    I don't know what kind of a 'frother' you have, but if it's just a steam wand (my favorite), don't submerge it all the way in the liquid of choice. Hold the tip just under the surface and move your pitcher down as the froth builds up.

    Yep, Susan's right about the egg white/milk thing. Skim milk will give you the sturdiest foam.
    You can whip heavy cream and get a nice creamy foam, but it is the taste of that steamed milk that makes a cappuccino or latte what it is.
    I'd say this is one of those trade-off things. I personally go for the 2% milk, for the lowest carbs with the best foam.

    and Jen - huge help. I always have skim in the house as that is what my son likes (gag) and DH uses in his shakes.

    I have a lil MrCoffee capp machine that has the lil wand/stick off the side... and i've been able to make great froth before... but since i've been LC for 4 yrs now... it's been a while.

    ah.... i just made a huge pot (French Press) of Organic Galapogos(sp?) coffee. Is it fantastic!! storing the rest (32oz) in the frig for Marcie's fab Frapp recipe.

    (finally found a company that burr grinds the beans just right.... starbucks was too fine)

    T's a happy camper this morning....

    Terese, last night I was dreaming about Starbucks Chocolate Brownie Frapp. Woke up in a cold sweat (LOL). I thought there was a receipe on the previous board for this and was now ready to try it. Do you have the receipe and could you please share it. I should have printed it out earlier but didn't and then the boards went down.

    OK... this is the only one i found by searching for *cappuccino*

    *edit* just did a search for Coffee and the only other one i have is the Pumpkin Breve one.

    Low Carb Recipes at LowCarbEating.com


    Super Fast Low Carb, Cappuccino Stuff
    Ingredients:
    Strong coffee, I use 1-1/2 times the normal amount of coffee per pot
    2 to 3 packets of splenda per mug (depends on your taste)
    ½ to 1 tsp vanilla extract per mug
    2 tsp non dairy creamer per mug
    1-1/2 to 2 tbsp cool whip per mug
    Directions:
    Make a pot of coffee double strong
    Add vanilla extract, splenda and creamer in a good sized coffee cup or small mug
    Add coffee and stir
    Top with cool whip (cool whip has only 1 carb gram and ½ gram sugar per tablespoon )
    Hints:
    Cool whip right out of the refrigerator will not melt away as fast.
    Use decaffeinated coffee at night if you want to avoid the caffeine.
    The cheap coffee at Wal-Mart is some of the best tasting coffee on the planet. The name is Arabica I believe

    Carbs: 5gm per cup (high estimate)

    You can add 1/3 packet of sugar free hot cocoa mix for a mocha flavor but you will have to add 3 carb grams.

    You can also use DaVinci sugar free syrups to suite taste but they are more expensive and you would have to adjust the sweetener amounts. This would however reduce the carbs.

    You can also experiment with other extracts such as peppermint extract etc. for other tastes.

    i moved this over from the Everything Forum as there was that new post on cappuccino/coffees

    btw, i did froth Skim last night - it wored well. I bought some whole milk, but havent used it yet.
