Question about heavy whipping cream!

Okay, I have a question regarding heavy cream. I have been buying the heavy whipping cream in the milk section. Is this the one I should be buying? It has 1 carb per 1 tbsp. I know some of the recipes that I have been looking at calls for this but the cream in the recipes are calculating less carbs than what I'm figuring with mine. Please heeeellllpppp! lol

Certain brands round up to 1 carb per tbsp, and certain brands round down to 1 carb per tbsp. Does your recipe specify a brand?

No, it just said heavy cream. I bought walmarts brand, but if there is another with less carbs, I will surely buy it! LOL I have been making the chocolate mousse and had been counting only 5 carbs per serving, but according to my whipping cream...there are 63 carbs in my 32 oz. carton..which comes out to 15.75 a cup or 7.88 for a 1/2 cup so thats where I'm having trouble figuring how that recipe could only have 5 carbs per 1/2 cup serving. Does that make sense? Please tell me if I'm not making sense...it's late and I'm zonked! LOL

You are experiencing the same thing I did a while back. Apparently whipping cream isn't just whipping cream, especially some store brands. I probably has a certain content of milk, and or other stuff. Check the ingredient list.

I now go to whole foods and by pure 100% unadulterated heavy whipping cream. It should be listed at 1 or less carbs per 2 (two) tbsp, or possibly 0 carbs per tbsp.

half and half should be listed as milk and cream (period) and have 1 carb per 2 tbsp.

Jim, where are you buying your whipping cream at? I would love to find it. I did check my ingredients out and it does contain some milk but it doesnt say how much so I see now thats why the carb count is different. Let me know where you get yours at or anyone else that reads this!

Kim,

I don't know if you have Kemps milk in Florida. I use Kemps Old Fashioned Whipping Cream. It's just cream and carageenan. I've bought organic cream that is just cream without the carageenan, and it goes bad 2-3 days after opening it. That's quicker than I can use it! LOL! I know Kemps has an Ultra Pasteurized Whipping Cream that is more carbs because there are more additives in it. You may have to search several stores and look at local brands.

If you are making a recipe which specifies WHIPPING the cream - then you'll end up with a much greater volume than when you started - i.e, a CUP of whipping cream will probably make 2 CUPS of WHIPPED cream. So that may also contribute to the difference you're seeing in the carb counts!

I ran into this problem as well when I first started 2 years ago. I finally decided to take an average. I count my cream as 1 carbs per ounce. That would be 4 carbs for 1/2 cup and 8 carbs per cup.

Whipped cream will definately add more volume (vs. liquid, non whipped cream) but it won't add carbs. If you whip a cup of liquid cream into 2 cups of whipped cream, it will have the same amount of carbs as the single cup unwhipped. Except, of course, for sweetener. You need to make sure you count how many carbs you add in the form of sweetener.

Also, if you buy ultra-pasteurized heavy cream, it will last much longer than 2-3 days. It last for a month or longer unopened, and even after opening, mine lasts a good week. I find it at WalMart. I recently have switched to half-and-half (in my quest to lower my fat intake a little) and am able to find that in ultra-pasteurized, too. Plus, my cat never minds helping out if I'm trying to finish some up. (He's one of those lucky felines who can drink milk and cream with no digestive problems, and he loves them just as much as cats are reputed to!)

Kim,

I get mine now at "Whole Foods." I have opted for Organic Pasteurized (not Ultra) cream and half and half. I like the flavor better and it doesn't tend to sit in the fridge long enough to be a problem for me. They have the ultra-pasteurized stuff too if it will be sitting around a while.

Of course, I don't know what is available in your neck of the woods.

It was amazing to me how much difficulty I had in locating just plain cream without all the additional stuff.

TJ's has the richest and lowest carb cream I have tried--their heavy cream isn't pasteurized, so you do have to use it quickly, but it is soooo rich and good--Char is correct--the carb count for whipped cream takes into account the volume after whipping
