Thread: First time recipe for eggplant?

    Went to the Farmers Market yesterday.. Decided to buy an egg plant - have never tried them, and decided the only thing they were ever good for is paining faces on them...

    SO.. what's a good eggplant recipe that someone who's never tried it before (but doesn't like "weird" veggies - advacado, artichokes, etc) might like? I only bought a small one...maybe 1lb...

    Someone mentioned here in the cooking forum the other day that they use eggplant and zuchinni in place of the pasta for lasagna. Hmmm...sounds interesting and delish.

    You could use my Fake KFC recipe and bread them and fry them. It is listed under "poultry -- other" in the recipe database here on the site.

    Funny you mention eggplant.
    I made up a batch of eggplant, red bell pepper, mushroom, onion and garlic with tomatoes last night. Oh yes and beef. I cubed the eggplant and all the other ingredients and after browning the beef well I removed it and added more oil and browned the onions peppers and eggplant added a can of tomatoes and fresh basil rosemary, chives thyme and whatever else I thought would go well. Then when it starrted to simmer i placed it in a 375 degree oven for an hour and change. It was really good. And it made 4 to 6 servings so I'll have it as a side dish but will eat the beef in the first 3 servings and then it becomes a side dish.
    But if you've never tasted eggplant I think eggplant parmesan is a good place to start. I wouldn't eat eggplant any other way for about 30 years.

    I oven fry it - cut it in half-inch slices crosswise so it makes big circle(you can peel or not, I never do), dip it into a beaten egg, then into seasoned crushed pork rinds and/or almond meal, and bake on an oiled baking sheet in a preheated 425* oven til browning on the bottom, about 10 minutes; flip 'em over until browned on both sides. We love it this way, and DH was never a fan of eggplant prior to me doing it this way!

    Also works great if you cut the eggplant into sticks and do some zucchini sticks with it - you can also use melted butter in place of the beaten egg. I like the sticks served with some low carb ketchup or Ranch or bleu cheese dressing.

    If its a little tender one, you can dip it in egg and fry it in butter, flip it once then put some melted cheese on top, my husband will eat it that way too, along with the use it instead of noodles in lasagna way!!

    If you're in the mood for something a little labor-intensive, but delicious:

    Eggplant Rollatini

    Slice eggplant in 1/4" slices lengthwise, salt and let it sit for 30 minutes to leach moisture from eggplant. Pat dry with paper towels.

    Brush with olive oil, or use cooking spray. Grill or broil eggplant till all crispness is gone and eggplant is slightly browned.

    Fill with filling (below) and roll up. Cover with marinara sauce (or not), sprinkle with parmesean and mozzarella cheese, and bake at 350f for about 15-20 minutes.

    Filling
    Ricotta cheese
    fresh basil
    pine nuts
    1 egg, beaten

    This is great to serve to company. It's not from any lc cookbook, but obviously you can make it as low or high carb as you wish

    For a first time experience I would recommend frying it. Then you can try one of the more involved recipes. Of course, I will eat any veggie that is fried! Sharron's recipe for breading is really tasty.

    I have a Turkish friend and had a really good dish last Thursday night at her house. She sliced eggplant & zucchini into 1/4" slices and cut some hot peppers (can also use plain peppers) into sections. She deep-fried all of them to a beautiful golden brown and served with a mixture of plain yogurt and minced garlic.
