Wanted to share that I've been using sliced almonds in my VCO chocolate candy recipe and it works great.
At Walmart you can buy sliced natural almonds or sliced blanced almonds. They soak up some moisture and take on the texture of oats, to a certain extent.
Just thought this idea might be useful to other cooks who like to tinker with recipes.
