Hi,
Last night I was thinking of making beef stroganoff, but I needed some noodles to go with it....then a light bulb went off in my head...so I took some La Tortilla brand tortillas, cut them in thin strips...boiled them and walla!!! I have noodles. Did not make the stroganoff yet, just thinking aobut it.
Though I would share this with you.

Good for you! That’s the way to get creative in the kitchen.

Another good noodle is zucchini. After you’ve removed the green skin, peel lengthwise with a vegetable peeler and viola! You have fettuccini noodles. Great for alfredo.

thanks for the tip on the tortillas - i always have them in the freezer.

I've never tried the Zucc's yet, but i do use thinnly sliced cabbage when i need a *noodle*

Ah yes, cabbage is another good one.

Eggplant works too although I don’t like eggplant much so I never use it.

What about spaghetti squash. Might that work? 8 net carbs a cup. Maybe that's too much?

I often use spaghetti squash. It depends on where you are in your WOE, or what plan you are on if 8 carbs will work for you. I tend not to worry about veggie carbs that much.

Can someone share how to cook the spaghetti squash? I have tried baking it in the past and it was very mushy.. probably cooked it too long. Thanks!
