Hot Tuna Patties!

I'd never heard of these until my SIL was telling me about a colleague of hers who makes them for breakfast because she doesn't like eggs. They're originally made with breadcrumbs, but I modified them to be LC. I am loving them! Remind me of tuna melts. Yum!

Hot Tuna Patties

4 oz. can tuna
2 eggs, beaten
1/2 c. pork rind flour (see below)
1/4 c. shredded parmesan (the kind in the can)

Mix all ingredients in a bowl and fry in a pan in butter until brown on both sides.

I like to melt a little cheddar on top and then add a slice of tomato. Yum!

(Pork rind flour is made by putting pork rinds into a ziplock bag and then crushing them with a rolling pin until they are like breadcrumbs)

LOL that is what I do with my pork rinds. I have used them in place of breadcrumbs in tons of recipes. I love them in meatloaf. They really give it a nice flavor. I am definitely going to try this recipe.

Last night I made the tuna patty recipe that I've had and improvised a bit.

1 can of tuna (leave the liquid on)
fresh onion to taste
1 egg
1 cup almond flour (normally calls for saltine crackers, but I thought the almond flour would be good)
Salt
Mix all together and form into patties.

I fried them in olive oil - they were wonderful! They could have used more salt than I put in, but I'm not big on salt.

You know, I have trying to figure out what I was going to do with all the tuna sitting in the cupboard! I didn't even think to use pork rhinds!

Hey that sounds like an awesome lunch but don't do what I did.

I can't get almond flour or pork rinds where I am from so I improvised with a bit of ground flax seed. I heard somewhere it could kind of be used as flour. I must have read something wrong because it was DISGUSTING!! Don't do it. <--that's how green I was after eating it

Do you have a Zellers in Halifax? They carry pork rinds. At least they do in Edmonton.

Steph,

if you cant get almond flour, grind your own.

or any nut for that matter.

i have this lil cheese grader, swiss made (think it's called a zylis) like the ones in Olive Garden restaurants

put your nuts in there and finely grind them... it's not as fine as flour, but will work for breadings.

These tuna patties are my new craving. I use a combination of both almond flour and almond flour. I sprinke cheese on them and eat them hot over a salad. Awesome!
