Mada,

I love spinach too

I got really creative one time (can't recall when) but i make this broccoli and Spinach bake.. basically, tossed it in the blender so there are no chunks.

mixed in some mascarpone cheese adn some other stuff and baked it. It really turned out wonderfully.

the recipe is in the database somewhere, but if you are interested, i can send it to ya, or post it.

it makes a huge 9x13 pan and great for holiday dinners

Ooh...Terese's recipe is one of my fav's!! In fact it is laying out on my counter to make today...so I'll post it:

Broccoli Spinach Bake

10 oz pkg. chopped spinach
10 oz pkg. chopped broccoli
1 cup cream or half and half
2 eggs
1/3 cup parmesan cheese
5 oz mascarpone (or ricotta or cream cheese)
8 oz shredded cheddar cheese

Defrost and squeeze dry the veggies.
Mix remaining ingredients (except cheddar) until creamy, then mix in veggies and half of cheddar.
Pour into 13x9 baking dish and top with remaining cheese. Bake at 375 for 45 minutes (I usually do mine at 350 for 35-40 min...hot oven).

Makes 8 1-cup servings at 290 cal, 23.6 grams fat, 4 total carbs - 2 fiber=2 ECC, and 14 grams protein.

Hey.. that actually sounds good.. That may be the only way I'm able to tolerate the taste/texture of spinach. I'm going to try that this weekend.
