| Ok, these boards have turned me on to CURVES, FLY Lady and now coconut oil but how in the heck do you cook with this stuff. I have tried frying eggs 2 days in a row and everything is sticking like crazy. What am I doing wrong? I bought my VCO at Trader Joe's. Also does it have to be refrigerated after I opened the jar? | I'm not sure why it's sticking when you fry, it never does when I use it. What type of skillet are you frying in? My VCO does not need to be refrigerated, but it certainly won't hurt it if you choose to do so. The VCO will harden and be more difficult to spoon out. I use the VCO for my chocolate candy recipes and the nature of VCO when refrigerated is extremely compatible for candy making. HTH Susan LCE Member since 01/02 341/283.5/185 |

| Shortie, I've never had anything stick with it either. BUT I do remember a "transition" period with my pans. I combined lard and CO at first. Maybe you should try that. It does not need to be refrigerated. It is heat stable. Blessings! | Yes, that's very strange. Perhaps you're not using enough oil which is creating sticky spots? As for uses, I also fry eggs in it (about ˝ the time) and sometimes I’ll add a little butter at the end for added flavor. I always fry my chicken and coconut shrimp in it. And, when I pan-fry a pork chop or steak, I generally use coconut oil. It handles high heat so well and I like starting my steaks off in a smoking hot pan to create a nice sear and seal in the juices. I guess you could say I generally cook all my proteins in it. For veggies, I usually stick to butter and/or olive oil. And sometimes I’ll throw some lard in here and there. | Thanks all for the advice. I use Calphalon pans and have not had this problem before, but I will try cleaning them again and see what happens. | Yup, shortie, don't know what the problem is. I do tend to use cheaper replaceable non-stick pans for my frying, however, since I'm quite hard on them. And I keep a separate skillet just for eggs. If Calphalon requires seasoning, you might try cleaning an reseasoning them before you start again with coconut oil..... BC 172/108/108 Zone since 4/98 |
