| We had chicken nuggets for supper last night and they were really good!!! I cut up the chicken breasts and made an egg wash with 2 beaten eggs and about 2 tablespoons of cream and about 1/4 cup of water. Put this in a large bowl and added the cut up chicken. Seasoned the chicken with some salt and pepper and mixed it all up together. Then took about 2/3 cup vital wheat gluten and mixed in about 1/4 cup each soy flour and flax meal, seasoned it with garlic powder, salt and pepper. Put this in a plastic zip-lock bag. Added a few pieces of chicken, zip shut and shake then deep fried until a rich golden brown. They were crisp and tasty on the outside and moist and tender on the inside. My whole family loved them. They liked them better than the reg. flour ones I used to make. I served broccoli with cheese sauce and a Caesar salad along with the chicken nuggets. No one even asked where the potatoes or rice was. I think they just didn't even miss them. |

| Yay! Isn’t it great when you can make such yummy foods that are actually ON your diet? At our house, we LOVE chicken strips. I use chicken breast strip, dip in egg wash, and then roll in grated parmesan. Yummy. Some Marie’s Blue Cheese dressing and we’re set! How do you make your cheese sauce? | Yes it is. At first I was just cooking a piece of meat and some vegetables. That got old very fast, I figured if I was going to stay on this diet I'd better start using my imagination and find some way of making other foods. Cheese Sauce: 1 cup grated cheddar 1/4 cup dry white wine 1/4 cup grated Parmesan 2 tablespoons heavy cream 1 tablespoon yellow mustard Combine all ingredients in a small saucepan over medium heat and cook, stirring, until melted and smooth. Note: I don't always have wine in the house so sometimes I'll use beer. My husband buys Guinness in bottles and I'll use a little and just put the bottle back in the frig. |
