I managed to make bread by whipping 2 egg whites like you would for an angel food cake, then adding 2 tablespoons of oat flour, 1 tablespoon of flaxseed meal and 1 tablespoon almond flour. The result was bread-like, but gritty because I used a coffee grinder to make the fours and flaxseed meal. I didn't think to add any salt. I simply poured the batter onto a cookie sheet and baked at 350F. Can anyone suggest ways to improve this recipe?

Would anyone be interested in joining a non-profit organic/low-carb grocery co-op or an organic community garden in Jacksonville, Florida? I am trying to organize both from the ground up and need members.

Good for you, trying to organize like minded people to the low carb lifestyle. I am dying for a slice of wheat bread but need to learn more about flours. Fortunately I live in an agricultural area,heck maybe I can grow something myself!
