Oh my goodness Marcie!! I must admit I have been reluctant to try most of the "cauli-anything" recipes, not because I don't like it but because half of the family does not. But I just had to try yours...added bacon, cheddar, green onions, and butter on top...major fake out for those fancy gourmet mashed potatoes you get at restaurants...and they really did not taste like caulif!!!!!!

It's amazing sometimes what we figure out we like if we just alter it into a different form.
My DH HATES mustard but doesn't mind things made with it or if it's in a sauce.

I made Marcie Lynn's fauxtatoes last night. They were so luxurious. Yum! I only made 1/2 batch because I only had 1 head of cauliflower. DH wanted more!! Guess I'll have to whip them up again. LOL!

I tried faux potatoes the other night for the first time and I was really impressed. I used frozen cauliflower that had gotten thawed out in the bag and was limp as can be. I was ready to toss them when I had a brain storm to cook them in the microwave a few minutes and dump them in my new food processor (yes, Shrinky, the ever wonderful Braun) with the same ingredients that AmazonGold used and whipped the heck out of them. Shrinky, it's definitely worth hauling the Braun out cause they came out so creamy it was unbelievable. I would have sworn that we were eating the real thing. Now my next project is to make Marcie's version because I love brie cheese.
