Low Carb Potatoes?

My husband and I are both in OWL; he's lost 40 lbs, I've lost 25. We're at the point where I'm exploring some add-ons to our menus. My father is a diabetic and is on a renal diet (no dialysis yet, thank goodness). He's been told that he can have potatoes, but must peel them, slice them very thin, and put them through a couple of soaks overnight before cooking them. They are then OK for his diet.
This made me wonder -- does this process eliminate some of the carbs, thus making the potatoes OK for a diabetic AND a low carber? Or does it draw out potassium or some other no-no for the renal diet? Has anyone heard of this before? Thanks!

Great question and I would like to know the answer myself. I use cauliflower for potato substitution for mashed; hash browns and potato salad.

When I read this thread, it reminded me of something I had run across recently. (I was Googling for info on nutritional components of vegetables): I located it; here:

Apparently, it's the potassium content of potatoes that is the problem, and soaking them will remove some of it. But I don't think that it has any effect on the carbohydrate count.

On the upside, cauliflower is listed as a low-potassium veggie, so cauli-mash is something that you both can enjoy!

Kumus, I've done the cauliflower for the mashed potatoes (which were good, but came out a little runny, any ideas what I did wrong?) and I've tried the potatoe salad which was really good too. How do you use it for the hash browns? I really miss my fried potatoes.

Thanks to everyone who replied. I was afraid that the carbs were "here to stay," and you messages seem to confirm that. We'll check with the dr. to be sure. I have tried the cauliflower idea -- it is really good, but 'not like Mama used to make.' Guess I was just hoping for the best.

I luv cauliflower... I have also used goat cheese in it ( i just tried it today)
very low in carbs and wonderful

Actually, I came across KetoKetatos in The Vitamin Shoppe.

Basically add cream, butter and salt to this powder and you get mock mashed potatoes. Not bad, actually, if you're missing mashed potatoes. The portion size looked a bit small, but this stuff is heavy! Top it with a little sour cream and some real crumbled bacon and I think it could work really well!
