Hi all-
my DH just started Atkins with me this week, and is begging for me to find a recipe for BBQ Ribs I could cook in a slow cooker or some how that they would be really tender? Any ideas?
I am really trying hard to find stuff for him to eat, as he is somewhat resistant (still) to the whole idea of giving up his donuts and cookies *sheesh!*
Any help is appreciated.

My Husband loves this!!! I also use beef sometimes!!!

BBQ Pork Southern Style

5# boneless pork shoulder or any kind of pork I use boneless loin(cut into stewing size pieces)
1/2 C cider vinegar (0 carbs)
1/2 C tomato sauce (9g carbs)
1/2 C brown sugar Twin (8g carbs)
2 T Splenda (2g carbs)
1 T sweet paprika (0g carbs)
2 T prepared mustard (0g carbs)
2 T Worcestershire sauce (3.2g carbs)
1 t ground red pepper (cayenne) (0g carbs)
1 t finely ground black pepper (0g carbs)
1 t salt
2 T Liquid smoke flavoring to taste(0g carbs)
1 - chopped onion


Place onions and pork shoulder pieces (fat trimmed) into crock-pot /slow cooker. Mix the rest of the ingredients together and pour over the roast.
Cover and cook low/med for approx 10 hours or until tender. About 30 minutes to an hour before serving, remove the lid of the crock-pot and turn it on high to let the sauce cook down and thicken. Stir the pot occasionally to make sure its not sticking. This can be started overnight.

I have a very similar recipe which I do in the pressure cooker, but I whack 10 carbs out of the total by using either Caramel or Gingerbread flavored sugarfree DaVinci syrup.

I make a barbecue sauce with that stuff too, to brush on grilled ribs or chicken. Very good!

Guess what was on sale today and who bought a bunch of pork spare ribs without any forethought?

I'm off to load up my crock pot and start this up for tomorrow!

It's great! My rack of ribs didn't fit right in my smallish crock pot, so I wound up doing them in a roasting pan. Put the stuff (made with the gingerbread syrup) on them, covered it tightly with aluminum foil and baked slowly (225) for most of the day. Then I took the foil off, turned the heat up to 350, and basted them with the juice every so often until the juice had reduced and gotten really thick.

A definite "keeper." Thanks again!

Thanks for the recipe Febe! I can't wait to try it.
Char- would you use the DaVinci syrup in place of the brown sugar?
Just wondering.
DH is going to be very excited with the news of BBQ for him.

MB, yes, ditch the other sweeteners and use the 0 carb DV syrup. It works great in this type of recipe!
