Twice-Baked "Potatoes"

So, I haven't made the mashed cauliflower yet, but I was thinking that when I do, I could use them to make my twice-baked potatoes I do for the holidays.

I plan on topping them with chopped onions, sour cream, shredded cheddar, and then sprinkling chopped green onion on the top - then it bakes at 250-300 until the cheese is all melted.

So, what do you guys think? Will the family notice so much?

I made Marcie's cauli-mash like that...with bacon, cheese, green onions, etc...it was fabulous!! Go for it!!

They may notice that something is a little “different” but, chances are, they won’t guess they’re not potatoes!

The trick is to load them up with one or two strong flavors such as bacon and onion. That way, they’re so busy “tasting” those ingredients that they don’t realize the “vehicle” isn’t the same old potato.

I've made mashed cauliflower many times, but tried Marcie's recipe with the brie for the first time the other night - then mixed in bacon bits and microwaved it per her recipe.

BOY was it good! I kept waiting for DH to say something because he swears he HATES Brie but he just went back for seconds! LOL!

I think I'll do that. He'll freak right out. Then I can say, "Honey, this is the way I ALWAYS make it!" MUAHAHAHAHAHAAAA.....

I think I might also try making it with the brie that has mushrooms in it....mmmmmmmmmmm!
