This is my first LC Thanksgiving and I came up with a great menu - I think.

Scallop Soup w/ Cilantro Cream (Atkins.com)
Roast Turkey w/ Bourbon Gravy (My own creation)
All-American Dressing made with LC Bread (My own creation)
Roasted Green Beans (atkins.com)
Whipped Root Vegetables w/ Roasted Garlic (My own creation)
Romaine and Red Pepper Salad (atkins.com)
Candied Sweet Potatoes (atkins.com)
Indulgent Chocolate Cake (atkins.com)

I am sure I will go over my carb limit but I figure it better to eat this stuff than the real deal. My husband did convince me to make a real deal apple pie but I will stay away from it. I am curious to know if anyone out there has tried any of these recipes from the Atkins site or what kinds of things you all are making for this gloriuos feast day?

I'm lucky to be going to someone elses home for Turkey day. But I'm bringing a low carb pie and a low carb carrot cake from a mix. My sister is type 1 diabetic and this will be the first year she'll get to share in dessert time. But I will eat a bit of sweet potato, some mashed turnips, the turkey, pickles, olives, nuts celery with cream cheese, green bean casserole and broccoli casserole. I'll go over my carb allowance by maybe 30 for the day. But past Thanksgiving dinners have had hundreds of carb grams and thousands of calories so I'll be way ahead of the game too.

We're doing a Prime Rib in the rotisserie this year! Yum, can't wait.

I'll make a baked potato for my non-LC mother, and DH and I will have mashed cauliflower. I'll make LC gravy with Thicken Thin Not/Starch - indistinguishable from the real thing. I'll make some cranberry sauce with liquid Splenda and a splash of Grand Marnier. Maybe some oven-roasted veggies, either green beans or Brussels sprouts.

For dessert, a nut-crusted LC pumpkin pie or maybe a LC chocolate cake I found on another site.

All in all it will be a nice LC meal!

I'll be doing the turkey,stuffing, gravy, mashed taters, apple, pumpkin, lemon pie for the HC people.

For me I will make some mashed cauliflower, cranberries, green beans w/ toasted almonds, and a LC pumpkin cheesecake.

I'm quite embarrassed to say that I haven't thought much about it! We've been so flat-out busy that I can't think past the meal I'm at.

Isn't that terrible???



I do know that my SIL is bringing the turkey, stuffing, gravy and rolls and my MIL is bringing a lemon meringue pie. All HC. Of those things, I'll have the turkey and a bit of the gravy.

Lemme think. I need to do this anyway...

OK, from my article on the subject of Holidays, the Sweet Pumpkin Casserole. The kids love that!

And my new article (if I can get my act together and submit it ) Caramel Apple Cheesecake.

Probably some mashed cauliflower or something.

I was gonna do brussel sprouts, but none of them like them... Probably just some green beans.

There. Now you know my menu

I am having turkey, ham, bake beans, mash potatoes, gravy, rolls, peas, corn and stuffing. Of course all of the high carb food is for the people who do not care about their health. I have to cook it for them though. For me I am going to have the turkey, marinated mushrooms, brocculi and cauliflower (raw with dip), deviled eggs, a cheese and meat tray, and a Lower C sweet potato casserole. I baked a pumpkin cheesecake for me. I bought the HC desserts. I told everyone I was not baking!

I am planning on allowing myself a spoonful of stuffing and gravy. I am feeling pretty confident that I can get through this starch feast without giving in to teh temptation. I hope I am right .

Roast turkey w/chorizo-sage stuffing (w/low carb bread).
Mashed cauliflower
Green beans almondine
A wonderful bottle of pinot noir.
Almond cookies and whipped cream
De-caf.

We'll have leftovers for days, but we both love turkey, so it's OK!

We had TWO turkeys, one roasted, one fried. I found a nice butter/garlic marinade for the fried bird with only 2 gms carbs per 2 Tbs. Yum!

And:

Marcie's Cauli/Brie Puree
Greenbeans with bacon and onion
My LC Jellied Cranberry Sauce (see other message)
Some boxed mashed pots and gravy from a packet for kiddo and his daddy
Atkins Lemon Poppy Muffins
Deviled Eggs
Relish Tray with Black and Green Olives and Dill spears, baby carrots, celery
Tossed Salad with Ranch Dressing.

For desert it's Dana's Pumpkin Cheesecake, with a Pecan, Whey powder and butter crust (YUM!) and freshed whipped cream topping (3 color to choose from, courtsey the grandson)

Diet Coke, Mich Ultra or White Wine, depending on the mood.

I also have a loaf of Nature's Own, mayo, and a head of lettuce standing by for leftover turkey sandwiches.

OK, this is what I finally ended up doing...

I made:
Caramel Apple Cheesecake
Orange Essence Almonds
Cranberry Sauce
Mashed Cauliflower
Sweet Pumpkin Casserole
Greens
Haystack Candies
Italian Sodas
(all LC of course!)

We also had on hand:
2 cheese balls with Rye Crisp crackers
Veggie plate and dips

My SIL brought turkey, stuffing, gravy and some home made bread. I had 1/2 piece of the bread and about 1.5 T of the stuffing.

Can I not cook for a few days???
