The light dawns on someone that sugar-free can be delicious!

Yesterday, we had guests for Thanksgiving. I don't remember what the context was, but I told one of the guests that there was no sugar in my house. Someone else offered him some of my Orange Essence Almonds -- one of my favorite recipes from the new book I am working on. He declined, and you could just tell by the expression on his face that he was thinking, "How in the world can something sugar-free taste good! I don't want to put that in my mouth!" Of course, he said something gracious about not caring for nuts.

As the evening wore on, I observed him thoroughly enjoying my home made sugar-free Cranberry Sauce, Sweet Pumpkin Casserole and the other LC dishes I had prepared.

Around that time, another guest got out my new cookbook. She started getting excited about the recipes. In context, I asked him if he enjoyed what he'd eaten. He said, "Oh, yea, everything was delicious."

Ha! Got him!

I then told him it had all been sugar-free.

(I just love the look on their faces when I do that!)

Then he had some of my Caramel Apple Cheesecake for dessert.

Hook, line and sinker

Now, they want a copy of the new book!

My SIL was not happy we weren't having mashed potatoes and then she tried the mashed root vegetables. "These are sooo good!" she said. Not another word about potatoes.

My husband is anti-sugar free. Made sweet potatoes with sugarfree syrup and ginger. He ate a huge pile. I asked him what he thought about the sweet potatoes. Loved them! Hah!

Made a sugar free pumpkin pie - merely substituted Splenda for the sugar. Can you say BLECK! I was the only one who ate any and couldn't even finish one piece. I never noticed the Splenda aftertaste before but i guess because pumpkin is so mild, it came through. Thank goodness I also made a chocolate cake from Atkins bars. That was devored as they thought the pumpkin was the only sugar free concoction until they saw me with my big piece. Should I have mentioned the effect malitol can have on some people?

Anyway, here's to a great dinner and I look forward to next year and perfecting a LC pumpkin pie!

We had a small gathering, just DH, my Mom, and me.

We did a Prime Rib in the rotisserie. She had a baked potato; we all had a slice of baked butternut squash, sizzling mushrooms cooked in shallot butter and olive oil, and sauteed spinach with pine nuts.

For dessert, I had made 2 of the 3 Minute Chocolate Cakes for Mom and me, and a variation on that theme in Strawberry for DH.

The day before, Mom was going to the store to get the Prime Rib. I had asked her to pick up a half gallon of the Carb Smart Vanilla ice cream to have with the cake. Well what do I find in HER freezer but a carton of Carb Smart Strawberry! And she LIKES it!

Little by little...........

We were at my mom's home yesterday for the holiday, and I notice more and more LC items in their fridge. After dinner, mom asked if I wanted a Klondike ice cream. When I turned to give her "the look", she quickly added that it was LC....I never knew Klodike had it's own LC ice cream bars - they were delicious, and only 5 carbs.

Guess I'm rubbing off on them....

keviport, I think I have 4 pumpkin pies...

One is on this site, it was one of my first recipes. It is in the database.

I've got one with a crust (normal pie)

I've got a pumpkin cheesecake

And

I've got a pumpkin Swirl cheesecake
The last is pure delight!
