I found this recipe on another forum; I made it today and had the first piece tonight. It was sooo goood, it's like a frappuccino pie.

Coffee and Cream Pie

1 Almond flour crust baked and cooled (15g)

1 tablespoon Stevia Plus(?g)
3 tablespoons instant coffee crystals(3g)
1 envelope unflavored gelatin(0g)
1/4 teaspoon salt(0g)
1-1/2 cups half and half (16g)
2 slightly beaten egg yolks(.5g)
1 teaspoon vanilla(1g)
2 egg whites(0g)
1/2 cup Splenda(12g)
1/2 cup whipping cream(8g)


In a saucepan mix 1 tablespoon Stevia Plus, coffee crystals, gelatin, and salt. Stir in half and half and egg yolks. Cook and stir until slightly thickened; remove from heat. Stir in vanilla and pour into a large bowl. Chill to the consistency of corn syrup, stirring occasionally.

Immediately beat egg whites till soft peaks form, slowly add Splenda and continue beating until stiff peaks form. When gelatin is the consistency of unbeaten egg whites (partially set), fold in stiff-beaten egg whites. Whip cream till soft peaks form; fold into gelatin mixture. Chill till mixture mounds when spooned. Turn into crust. Chill several hours or till set.

The whole pie without the Stevia is 55.5g.
I don't know how to figure carbs for Stevia.

Stevia Plus is all fiber so there shouldn't be any carbs to count for that.

I was thinking that next time I make it I might try adding 1-ounce of unsweetened chocolate and another tablespoon of Stevia to the milk and egg mixture and make a mocha pie.

A little chocolate is always good for what ails you.
