I eagerly picked up a can of unsweetened coconut milk, thinking it would come in handy for a recipe, however I haven't found a really interesting recipe to use it in! Since you guys come up with some many great ideas, I figured this is a great place to find some ideas!

Hi!

I love coconut anything. One of my favorite recipes is Pork Satay with Spicy Peanut Sauce. The peanut sauce is made with coconut milk and peanut butter (among other ingredients) and is very yummy!

I like chicken curry made with coconut milk and also you can make a fabulous dessert with it.
Just desolve a packet of unflavored geletin in about 3 tablespoons of cold water. While that it blooming add one can of coconut milk and 1/4 cup heavy cream to a sauce pan and heat to a simmer. Add some sf syrup (I like both choc. and vanilla) to sweeten or add Splinda to taste. Stir in the geletin and place in a bowl covered with plastic wrap in the fridge for a few hours. Yummy! Very creamy!
