Yesterday I bought a granola type flax/nut mixture at the local source (very high fiber). It has a sweet vanilla taste. This afternoon, I took .5T chunks of cream cheese and rolled them in the flax mixture. Mmmm, tasty little cheese balls. I considered mixing the cream cheese with a little sweetner, but the finished product was really sweet enough with just the cereal. So, the only change that I would make before doing it again would be to chop up some of the bigger chunks to make the coating more even.

Judy,
Thanks for the idea. I have just bought a great cereal from Walmart that is LC friendly I think. It is Uncle Sam and has flax seed in it. And price is very resonsible. I am so excited about using it with your idea. Will be a nice holiday snack.

Maryd,
The Uncle Sam cereal that you found must be different from what I saw yesterday. That one was about 36 gms. per serving. The flax mix that I have is 5 carbs and 3 fiber in 1/4 cup.

Don't forget about herbs too.

This is a classic way to serve goat cheese balls but cream cheese would also work great.

You can roll them in everything from cracked pepper, paprika, chopped chives, thyme, etc.

Also, just plain old chopped nuts!
