I found this post on another board; went to Walmart and got some of the beans. We ate beans and cornbread one night and I made chili with the left overs the next night...She was right, even after eating them two nights in a row it didn't knock me out of ketosis. They were 99¢ for a one pound bag of dried beans.

I found some Small Red Beans-Great Value brand at Walmart.

The nutrition facts: total carb 22g & 16g fiber for 1/4 cup dry. Which when cooked would be 6g for a 3/4 cup serving.

I cooked and ate them twice in the last two weeks with Sherrie's Buttermilk Cornbread http://www.headed-west.com/snacks33.htm just to see if it would knock me out of ketosis, it didn't.

They are really good, and very cheap!

I cooked them with onions, bacon drippings, o carb smoked link sausage, a can of tomatoes with green chilies and cilantro. I ate a great big bowl both times, they were great!

Bean Arithmetic:
A pound of beans measures about 2 cups.
Beans triple in volume when soaked and cooked.
A cup of dry beans yields 3 cups cooked.
A pound of dry beans yields 6 cups cooked.
Use 3 cups of water per cup of dry beans for soaking.
Simmer each pound of beans 2 hours after soaking.
A pound of dry beans makes about 9 servings of baked beans.
A pound of dry beans makes about 12 servings of bean soup.
A one-pound can of cooked beans measures about 2 cups.

Is that what they are called: Small Red Beans? I think I would prefer them to soy! I'll have to see if I can find them around here!

Yes, the name on the bag is Small Red Beans. They are a Walmart store brand, (or at least here in Texas-Great Value-is the Walmart store brand) so if they don't have them I wouldn't think it would be much trouble to order them.

The lady who posted the thread was also from Texas.

Wow - that is great to know!!! I always used those from Wal-mart when making red bean and rice before low-carb. I preferred those over the traditional kidney beans.

I finally did these up today. I added them to a taco meat mixture and had it on a taco salad.

They did not knock me out of ketosis!!!

MUCH better than the soy. Even picky dh liked them

They will be a very nice occassional treat!

These are great beans...bought 6 packs of em last time I was at Superwalmart. But made a stupid mistake with em...too funny...

I soaked them as you are supposed to. I used about half that I soaked, and put the rest (just soaked,not cooked) in a baggie in the fridge. About 2 days later...you guessed it. WHAT A SMELL! I didn't know what it was until I opened the bag!!!!

I don't think I've ever cooked dried beans before!
Now I know better!

I LOVE these beans--made a fantastic beef chili with them recently--such an improvement over soy beans--and worth the extra few carbs!

I am hoping to find these here in NY. I will check the next time I run to the grocer. I cant use soy beans and I am really wanting some chilli!

I've found them both at Wal-Mart (their brand) and at my local grocery store (their brand), so you shouldn't have any trouble locating them.

I too made a very tasty chili with them.
