Amounts are approximate.

Low Carb Hash Browns

makes 1-2 servings

1-2 large (or 4-5 small) turnips, shredded or diced
ice water
2-3 T of heavy cream
2-3 slices of bacon
a small onion, finely chopped
salt & pepper to taste


Soak the diced or shredded turnips in ice water (enough to cover turnips) and cream for about 15-20 minutes. This will remove the bitter turnip taste.
Drain, rinse and pat dry with paper towels.
While the turnips are soaking, fry the bacon in a large frying pan until crispy.
Remove from pan and set aside.
Fry the onions in the bacon fat until transparent.
Remove from pan and set aside.
Fry turnips until done, about 7-10 minutes on each side. They will greatly reduce in volume and become almost transparent when done. Continue frying them until browned and slightly crispy.
Add back the onions.
Salt & pepper to taste.
Top with crumbled bacon.

Enjoy.



Entire recipe made with 1 large turnip has approx. 8 net carbs. (11 - 3 grams of fiber)
Not appropriate for Atkins induction.

Brighty,

I've been seeing a lot about turnips on LCE. I've never tried them, so I think I'll check out this recipe...trying to add new veggies to my life. Thanks!
