Kroger now carries their own brand of unsweetened, flaked coconut.

It is in bigger shreds, just like the sweetened coconut. My DS uses it and I, too, prefer it over the fine, grated coconut. I am including the info from the bag. All you need to do if you have Krogers, is take this in to them, and they will begin to stock it. Make sure you tell them you're a LCer, seems they really want to cater to us!

Speaking of Coconut. I bought some fresh grated unsweetened this weekend at my health food store. Now my question what can you do with it? Only found one recipe said to put it in whipped cream with peanuts. Any other ideas?

Ummmm....coconut macaroons come to mind
Or the basic LC almond cookie with some coconut stired in, but sometimes you need to increase the sweetners just a tad. Coconut fried shrimp is another yummy thing too!

Just wondering whereabouts is it located at Krogers. I checked with the sweetened coconut and nothing......

TM, most likely you'll have to copy the info in my original post, take it to your Kroger's and ask them to order it. They will be glad to, it may take a bit to actually get on the shelf.
