Thread: any good cheese dip?

    I can't find any good way to make a cheese dip like you get at any good mexican restaurant. Cheddar just doesn't melt good. I've tried mixing in whipping cream, but it just doesn't work! How do they do it without using velveeta? That's typical,,,the best cheese for a dip is the one we can't have.

    What are you going to dip in it?

    I might try mixing some shredded Mexican blend with some cream cheese. Stir half-way throught the melting process (microwave?) and nuke a little longer. See what happens. If it's too thick, maybe add some cream after it has begun to melt. I wonder how it would taste with a little salsa added in. (my mouth is watering. )

    I might have to try that one.

    Barb has the right idea. I make a really good cheese dip to dip veggies or pork rinds into.

    1/4 of a pack of cream cheese
    1 cup shredded sharp cheddar cheese
    1 to 2 Tbls of cream or water
    a pinch of garlic powder

    Microwave the cream cheese until very soft then stir in the cream or water until smoth and liquidy keep microwaving until it gets there. Now whisk in the cheddar cheese until smooth. Stir in the garlic powder to taste.
    If it is still to thick, add a bit more water.

    this stuff isn't mexican but its really good :
    8 oz cream cheese
    8 oz feta cheese
    1/4 cup butter
    chopped black olives
    chopped onion
    minced garlic about 1/2 tsp
    and if you want to mexican it I would add some chopped jalapanos and some chopped tomatoes
    It's not nacho cheese dip but its pretty darn good with those spicy pork rinds

    Try a block of cream cheese, a can of Rotel diced tomatoes and green chilies, and a cup of cheddar. Heat, blend, and keep stiring until you get it right

    I do basically the same...softened cream cheese, shredded cheese, garlic powder, any spices you choose, or salsa. This can be served cold or hot. If you want a thicker dip, add in a little sour cream (keeps it from getting firm as it cools) or cream if you want it kinda runny.
