| A wonderful crunchy salad... 6 servings 10 slices bacon 1 head fresh broccoli, cut bite size pieces 1/4 cup red onion, chopped 3 T white wine vinegar 2 T Splenda 1 Cup Mayonnaise 1 Cup sunflower seeds Directions 1 Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. (I used microwave 2 In a medium bowl, combine the broccoli and onion. In a small bowl, whisk together the vinegar, splenda and mayonnaise. Refrigerate for at least two hours. Overnight is better. 3 Before serving, toss salad with crumbled bacon and sunflower seeds. I didn't think I would like this but I did and so did everyone in the house! They ate it all up.. Let me know what ya'll think... Since I've been making this more and more, I have been buying the bulk crumbled bacon from Sam's CLub and adding that and the sunflower seeds just before I have a dish. It taste better w/these not soggy. I also like a little extra onion. Ya'll don't know what your missin! | I made something like that last night--more of a confetti salad. Red and yellow pepper, cauliflower, minced onions, and cubed zucchini. Coated it with Newman's olive oil and vinegar dressing. It still didn't taste quite right so I put in crumbled cooked bacon and 1 packet of splenda. It was very appealing looking, and everyone in the family loved it. |
