| Hi! I LOVE making cauliflower fried "rice" and wanted to try making spanish "rice" this way. A friend has invited us to dinner tomorrow night, and she's making Chicken Verde, so I told her I'd try and make this and bring it. What would you add? (Pre LC I'd just use a package mix). Chili powder? Cumin? Garlic? Dried onion? Any suggestions would be greatly appreciated!! Thanks! | Garlic and onion for sure,I can't do cumin tastes like perfume to me. Green peppers, chopped up tomatoes and some red hot or tabasco for a kicker? Oh yeah and some grated cheese, gotta have cheese.Jackie |

| OK, this is just off the top of my head, but: 2 tablespoons oil 1/2 small onion, chopped 1 green pepper, chopped 2 cloves garlic, chopped 2 teaspoons chili powder 1 teaspoon cumin 1 teaspoon dried oregano salt and pepper to taste 1 14oz can diced tomatoes in juice 3 cups chopped cauliflower, rice consistency Heat oil in large pan, saute onion and pepper until they begin to soften. Add garlic, and saute one minute. Add chili powder, cumin and oregano, and saute until fragrant. Add tomatoes and cook until thickened and almost dry. Add cauliflower, stir, and cover pan. Cook over low heat until cauliflower is tender. Add salt and pepper to taste. You might want to try this first; it's just a SWAG (sophisticated wild-a** guess). But, should give you a start. | I made this using ChefTrina's recipe (mostly) with a few variations. It was really good... I recommed it. Spanish Cauilflower "Rice" 2 tablespoons oil 1/2 small onion, chopped 1 green pepper, chopped 2 cloves garlic, chopped 3 teaspoons chili powder 1 1/2 teaspoons cumin 1 t. salt 1 14oz can diced tomatoes in juice 3 cups chopped cauliflower, rice consistency (I shredded it in my food processor) Heat oil in large pan, saute onion and pepper until they begin to soften. Add garlic, and saute one minute. Add chili powder and cumin and saute until fragrant. Add tomatoes and cook until thickened and almost dry. Add cauliflower and salt, stir, and cover pan. | I made some spanish rice using Cheftrina's recipe but instead of cauliflower I boiled some low carb spaghetti and then cut it into rice size pieces. It was really good. We had it with our fajita's. Thanks for the recipe it was great. |
