Fauxtato Salad :D

I have this low carb cook book and one of the recipes was this fauxtato salad, faux as in fake. LOL I made it and it was pretty good.
Used cauliflower instead of the potatoes, then basically just made the salad like I would've otherwise by adding the following:
minced green onion
boiled eggs
diced dill pickle
mayo & mustard with a packet of Splenda for the sauce
Thought I'd share that is was tasty, you can alter it to your specific tastes I'd say, by maybe adding some crumbled bacon or a few bleu cheese sprinkles. Mmmm

That stuff is just as good (if not better) than potato salad. And much better for you. I bring it to summer cookouts (BBQ's up North). I have a few recipes for fauxtato salad. Is yours from Fran McCullough's book? well they're all pretty similar I think.

I make this in the summer - DH and I like it BETTER than potato salad! Bright, I make mine with steamed-until-barely-tender cauliflower which has been cut into big chunks.

I also like bacon bits in mine, and diced red bell pepper. I put some celery seed and some cider vinegar in my mayo dressing too.

As many ways to do it as there are individuals who make it! Just like that ol' nasty tater salad....
