OK might be a silly question to some but ....

"Low Carb Cooking" at Low Carb Diet Support: "when you clean and cut up your broccoli or any veggies really how much do you keep what about the stalk wondering if i am wasting alot of my veggies i have 2 bunches of ...."

Donna, not a silly question at all! I don't use the cauliflower stalk but the broccoli is a different story. Take your knife and catch the edge of the stalk and pull. Repeat until you have removed all the inedible outer layer. The remaining core can be sliced or chopped and is tasty. This works best on the broccoli that is sold with the long stalks still attached.

Hello KyStar,
I use all of the stalk, except the very bottom part and the leaves. If when cutting it seems pithy I don't use it. For the most part I just munch on the stalk pieces while cutting the rest. If you don't like the taste of the stems, many stores will sell just the crown part of broccoli so you will not be wasting your money.

i been wasting some of my veggies
oh well now i know
i am going to cut them up now
stalks and all well on the broccoil

Here's a recipe for LC Clam Chowder that uses cauliflower stems.

Clam Chowder

1 core of a fresh cauliflower (not the floret’s)
2 c. beef stock, bouillon or water
1 10oz. can of clams and broth
1 T. minced onion
salt to taste
1 T. butter
2 c. heavy cream
1 spring or ½ t. minced parsley

Dice cauliflower core, simmer 10 min our until cooked like a potato. Heat the cream and stock together. Add all ingredients and heat through.

I haven't tried it yet... on the menu for this week though, since our walmart ran heads of cauliflower for 97¢ each!
