| 1 24oz carton cottage cheese 1 dozen eggs 3/4 cup pecan meal 3/4 cup soy flour (or your favorite l/c bake mix) 3/4 cup soy protein isolate 2 tsp vanilla a/s equal to 1/2 cup sugar 3/4 cup oat fiber 2 tsp baking soda Put the cottage cheese and eggs in a blender and process until smooth, add the vanilla and artificial sweetener and process until mixed. Put the rest of the ingredients in a large bowl and add the egg mixture and whisk thoroughly to combine. This batter is fairly thick. However, if you desire a thicker batter, simply add more oat fiber. When I use this for waffles, I make the batter a little thicker and add a stick of melted butter to the blender while processing the eggs and cheese. This makes a nice nutty pancake that is low in carbs and high in protein and fiber.
