What's your favorite pancake recipe?

I was making DS some pancakes this morning (Bisquick... thank God you can buy a small packet of it now), and wanted some too. So I whipped up a recipe I've had that uses cream cheese, and "tweaked" it a little with the flaxseed meal (thanks Barb, for touting the benefits of this... I'm loving it in the Mock Danish too!). They were really good, thin, but good. The batch makes 9 4" pancakes. I ate 3... OK 4 . I'm thinking of using almond flour next time to see how they turn out.

So... what recipe do you use?

Low Carb Pancakes

3oz. cream cheese, softened in microwave
2 eggs
3 - 4 packets Splenda
2 T. vanilla whey protein powder
2 – 3 T. heavy cream
½ t. baking powder
1 t. vanilla
2 T. flaxseed meal

Microwave cream cheese until VERY soft (you don’t want any lumps in the batter). Add eggs and mix until smooth. Add whey protein powder, Splenda, vanilla, cream, baking powder and flaxseed meal. Mix until smooth. Cook on medium heat on a greased frying pan as you would pancakes. (Careful – they are very delicate).

Top with:
3 T. melted unsalted butter + ½ t. maple flavoring + 1 – 2 packets Splenda & whipped cream
-OR-
¼ c. Splenda + 4 T. melted butter + ½ t. cinnamon

12g ECC per batch.

Here's my favorite, we eat it every weekend - just finished off a batch this morning!

Char's "REAL" Pancakes

1 heaping tablespoon flax meal
1 " " almond, pecan, or hazelnut meal
1 " " wheat bran (NOT germ)
2 heaping tablespoons vital wheat gluten
1/2 heaping tsp. baking powder

Put these together in a bowl and whisk to blend.

In a 2 cup measure mix together:

2 tablespoons DV SF syrup (We like Danish Pastry)
1 tablespoon heavy cream
1 tablespoon coconut oil or melted butter
2 eggs
2 tablespoons water

Blend the wet into the dry, mixing well. You can, at this point, add 1/2 cup blueberries if you like - I use the Trader Joe's frozen wild blueberries, thawed

I use a small ice cream scoop to measure and dispense the batter into a hot nonstick skillet - you can also use a 1/3 cup measure.

Cook til done to your liking.

Makes about 9 3" pancakes. Serve with butter and your favorite SF syrup.

Add a couple strips of bacon and it's a meal fit for a king! You'd never know the pancakes were low carb!

Here's my very favorite pancake recipe tweaked from a recipe I found else where on the net.

Almond Vanilla Pancakes

1/4 c. almond flour
1 scoop vanilla protein powder (can use soy or whey)
1 Tbsp. sour cream
1 egg
1/2 tsp. baking powder
1 Tbsp. sugar free vanilla syrup
1 Tbsp. oil (I used light sesame oil)

Mix all the above together. If the consistency is to thick for your personal taste, splash on a bit more s/f syrup or water.
Pour on a non stick griddle surface that has been greased. Recipe makes 2 large pancakes.
May be increased to suit the amount of people you are feeding.

I top mine with whipped cream sweetened with s/f pancake syrup. YUMMM

Another Pancake Option
Hits: 8291 | Votes: 3 | Rating: 10 out of 10

2 large eggs
1/4 cup whole milk ricotta cheese
2 - 4 Tbsp. ground flax seed (golden preferred)
1/8 tsp. salt
1/2 tsp. baking powder

Whisk all ingredients together and drop onto hot, greased griddle (I like bacon grease for a little extra flavor & crispy edges). Turn when thoroughly set to cook second side. Serves 2, each with 3 essential carbs.

Nutritional Information for each of 2 servings:
236 calories
16 gm. fat
8 gm carbs
5 gm fiber
14 gm protein
klizajane6@aol.com - I very much enjoyed this pancake! I did do some variations though. I always used 2 tbsp flax seed ground, but for the other 2 tbsps I used variations of soy flour, almond flour, or wheat gluten. All of these ingredients are new to me so I'm experimenting. Your pancake recipe is a hit at my house --- and I have two people who are pancake fanatics. I have tried at least 30 different low carb pancake recipes and NONE come close to satisfying my family- your's did. Thanks so much for working out the specifics and generously posting your recipe.

Northernlady, my pleasure - I'm glad it met with the approval of your pancake fanatics! LOL!

I have one in my house also, which is why I tweaked and tweaked on this recipe - he turned his nose up at all other attempts! Now he suggests this one every weekend! As in, "Huuunnnneeeeeee, are you gonna make those wonderful pancakes today?"

where do you buy "vital wheat gluten?" I live in a rural area and there's not much around. Any good online sources?

I'd just add here that I've made Charski's recipe substituting Wheat Protein Isolate (the Arise 5000 variety) for the Vital Wheat Gluten. Both items, if I remember, are available at both netrition and honeyville grain.

Since I figured out that I have a wheat allergy I just make pancakes out of the OMM ingredients. Slather on the butter and top with Maple Grove Sugar Free (sweetened with Splenda and Sorbitol). YUMMY They make pretty good waffles too.
