I came up with this recipe for DH when he needs a change from hot cereal every day. He made them this morning cooking them in the waffle maker and said they were delicious, alot like the whole wheat ones we used to make.

Pancakes from Maggies' Cereal Mix

1 c. Maggies' cereal (recipe in recipe room)
1 tsp. baking powder
1 tsp. cinnamon (optional)

Stir together in a bowl. Then add:

2 eggs
3 Tbsp. s/f flavored syrup (we used the brown sugar one from NF)
3 Tbsp. oil
Water to thin to pancake consistency.


Mix all together with a whisk and bake in a skillet that's been sprayed with vegetable oil spray, or use a griddle or waffle iron.

If anyone else tries them please let us know what you think.

Cool, Deannie!

I don't even know where my waffle iron is, but I know I didn't toss it! I'll have to dig it out and give this a try! Especially in the summer, when I like to make my own lc ice cream. I used to love waffles and ice cream!

I've used the mixture as a base for muffins, too, which worked pretty well. (I wasn't writing things down but just used my old Settlement Cookbook as a rough guide to estimate what else to add.)

Wow Maggie, I hadn't thought of using the mix for muffins. Now I'm going to have to give it lots of thought and see what we come up with. Thanks for the new idea!

I forgot to add that DH said later in the day that he felt like he had cheated by eating the waffles because they were so good.
