I was making some chocolate chip cookies for my sweetie for valentines day. I figured, what the heck, I have a sugar substitute, I have a flour substitute, and I have these little SF Hershey Dark Chocolate bars I can chop up and make chips. So I made his batch...and my batch. Mine contained butter (1 stick), erythritol (3/4c), 1 egg, 1 tsp vanilla, almond flour (1c), baking soda (1/8 tsp), and baking powder (1/8 tsp). I chopped up 5 mini-hersheys for chips. The dough tasted pretty good. I put it in the oven, and when I checked on it 5 minutes into baking, the dough balls had disintegrated into a gloppy liquid. Ok. So I can't have LC home made chocolate chips cookies. Undaunted, I scraped the gloppy mess off the cookie sheet and into a tupperware bowl, where it lives in the fridge, awaiting a cookie dough craving

Hi Tara,
Sorry the cookies didn't turn out well.
Just a thought, next time try making a bar cookie, or looking at your ingredient list maybe try cooking it in the microwave like the 3 min. chocolate cake that Mikeyrat posted.

I don't know what your oppinion of substitutes is, but every time I go to the supermarket, I see a keto low carb chocolat chip cookie mix. While I am tempted to try it, the one thing stopping me is the price, about $6. I wouldn't mind having a low carb cookie or two, but I don't think I want one that badly.

Thanks! I knew there was a Snickerdoodle recipe somewhere on the site! Do you by chance have any cookie recipes that don't call for nut flours? BF is allergic and I'd like to make cookies we could all enjoy without making separate batches. p.s. Just had the mock potato salad from your latest cookbook...MMMMMMMMMMMM

I bet it was the SF chocolate that did you in. I tried that once with a pure delite bar and it was horrible! Maybe they just don't melt well outside our tummies

Well, guys, I'm not that disappointed. It was an experiment on a whim, and I half expected it not to work. I kinda like Susan's idea about the LC cookie dough ice cream. Maybe I'll whip up some cream and freeze it, then mix it up with this stuff. Then I'll have to hide it in the freezer and bolt the door shut

Tara, you could try subbing soy flour for the nut flour portion, but I cannot guarantee the taste...
