question about coconut delights???

I was wondering if any one has made these yet? I have found all the ingrediants except for the chocolate syrup she calls for in the recipe. The only thing I can find with out going a hour and half away from home is atkins SF syrup. Does any one know if this will work? I going to be makeing them for v-day... so I sure hope some one knows an alternitive. LOL

Well, I've made them. Do I count

Tanya, what kind of syrup is it? If it is the kind for coffee it will work just fine.

You can really use any flavor you want. I can't imagine any that would be bad -- it would just change them into being more like a truffle than an "almond joy" kind of thing.

well I suppose you count sharron! LOL

The only thing I could find is the atkins SF syrup. You can use it in coffe.. bumer i could find anything else. Well I will just have to make it and report back! lol

Hi Sharron!
I has been over a year since I've been on this list. I'm back on the wagon again!
This is probably a goofy question, but could I use butter instead of coconut oil? I DEFINITELY want to try it w/ c. oil, but can't make it out to the store tomorrow. I think I have coconut extract.... I'll experiment unless I get word from you that it won't work. Thanks! Janelle in CA

Don't worry about the coconut extract. I don't care for the taste of it and I dont' think it is necessary. Use butter

Well, I just made this last night and something had to go horribly wrong. I followed directions to a T, but my coconut things were really loose-they wouldn't stick together to make a little ball.
And then to top it off, after I made the coating mix, there really was hardly enough of it to go on all of the coconut things.

Any ideas as to what I did wrong?

Sheyrena,

What brand milk and egg protein did you use? If you didn't use Trader Joes, you might want to add more to it. Different m&E proteins act differently, unfortunately.

The coating: Did you put them into it while it was still very warm and lift it out using 2 forks and allowing them to drip off the excess as in the photo? If you didn't do this, then there would not be enough. We had this "glitch" during testing. If it is done that way, there should be plenty.

Janelle, I think that will be fine. The filling should hold together nicely -- if it doesn't add more protein powder. It shouldn't bother the taste.

That was the same problem that Tanya and I had when we made them last night!!! Next time, we will add more M&E protien. Thanks Sharron!

P.S. Even though they didn't hold together, they were GOOOOOOOOD!!!!

Well! Thank you, Sharron!!
Our Coconut delights were delightful!
My children had a great time helping me make them. I think we would have prefered to eat the coconut mixture w/out the chocolate. We just drizzled the choco, because I believe I put double the amount of baker's choc. It was pretty "strong" and rather bitter in spite of the sweeteners.
The four of us cleaned them up just the same!
My 6 yr old ds has been SO looking forward to Valentine's Day. It was practically like Christmas for him. We move our kitchen table into the living room and the kids make valentines to hang from the ceiling fan. They made placemats too. We lit candles and put on classical music. We had leg of lamb, steamed kale (yuck, by the way. I hated it more than my kids!), and fautatoes with leeks. We found out that if you add a packet of splenda to sparkling water, it really fizzes up! Great fun! Then we went around the table taking turns telling what we love about each other. My little guy lit up like a Christmas tree each time one of us talked about what we love about him. These are precious times!!!

I'm sorry! I thought I had specified NOT to use Bakers... It is NASTY

Actually, the recipe started out as JUST the filling -- it is a separate recipe in the book I just finished

Oh Janelle, how absolutely sweet!!!!

As for the filling being "loose", next time try chilling it in the frig first (maybe a couple of hours) which should solidify it somewhat. I think the next time I make these, I will try some almond extract in them. I am finding since doing this WOL I LOVE almond flavoring. I like to bury an almond in the middle and then roll the filling around it. It takes more time, but they come out perfectly round and look like professional candies after they are coated with the chocolate. They are sooooooooo yummy. We're going to a party tonight.......hmmmmmm, I'll have to make some to bring with.

Lol! Sharron, you said you like the chocolate from Penn., but I couldn't find it and had no idea there was a difference btwn Hersheys and Bakers. I can't wait to try it again!

ha ha ha.... me and kim used bakers brand chocolate too! I thought it was bitter....in spite of the fact that in the first batch kim put in 2 bricks thinking it was 1 square...but it was really 2 squars per brick! Something we had to laugh about! LOL But.. all and all.. every one just loved it because the sweetness of the filling counter acted the bitter of the chocolate! LOL I can't wait to make these again!
