Thread: Mmm LC stuffed pepper soup

    the other day i was hungry for stuffed pepper soup.. i figured i couldnt put rice in.. and that was fine ..
    so i went to the store.. walking up and down trying to find things to put in it...
    i grabed a can of beef broth 1 can diced tomatos
    1 lb ground beef and 1 lage green pepper
    i had 1 realy small onion... and a box of veggie soup mix...

    i used 1/2 the can of tomatos and 1/2 the package of box veggie soup mix

    first i browned the ground beef in my med stock pot... drained excess fat. when it was browning i cut my onion and pepper in small enough pieces i could fit more than one piece on spoon at a time... i tossed it in to brown ground beef.. i accidently almost let it char (the ground beef that is...) but it gave it a grilled burger taste.. when the onions and peppers just started to become trans..i added in 1/2 tsp of minced garlic and stired threw... added salt and pepper... then i added 1/2 the can of beef stock and cooked it down for about 5-8 min... filled the can the rest of the way up w/ water... added that in... then put in 1/2 the can of tomatos and veggie soup mix.. i shut it off and let sit for 10 min.... stired once... and then had a bowl.. OHHMMMMYYY GOODNESS!!! It was wonderfull...i had enough left overs it lasted about 5 meals... i do not know the carb count on it.. and it would change if you left out the veggie soup mix.. but my spices were few and far between and i was trying to use what i could....

    Sounds yummy. Thanks for sharing the recipe. I also saw a recipe that added spicy crushed pork rinds. Not sure how that would taste, but its an interesting thought. Never knew there were so many uses of pork rinds.

    Will have to try your recipe soon.

    im not a big fan of pork rinds in a moist or wet dish... i get a soggy bread feeling im just not one up for... trust me i didnt miss the rice.. there was lots of other tastes and plenty of texture it realy didnt need it...but if ya try it let me know how it turns out..

    becarefull if someone is on iduction beacuse this recpie has the tomatos and onion... i had to watch how much tomato and onion i ate during induction or i stoped looseing..
