Anyone have any good recipes?

I discovered something pretty cool: coconut milk firms up quite a bit when it's chilled, to about the consistence of real whipped cream. It's hard for me to resist eating it right out of the can that way when I've been refrigerating it.

I'm a total coconut addict...help! (And I have seen Sharron's recipes for coconut chicken and coconut delights; the former I'm anxious to try; the latter I think is too much work for candy. )

Libby,

Fran McCullough's "The Low-Carb Cookbook" has a wonderful recipe for Thai-style beef curry. Main ingredients are cut up beef, coconut milk, and red Thai curry paste. It's delicious!

I too am looking to use more coconut milk. I will try your idea of chilling it.

Well I want to share MY new creation.

Using Thai Kitchen Coconut Milk (which has coconut milk and guar gum in it) I made a yummy chocolate pudding.

I let the coconut milk chill until firm, then added cocoa, chocolate designer whey, and sweetener. It turned out YUMMY. And I bet one could make a version without the whey, then it would be vegan.

I have tried the coconut chicken. In one word: AWESOME!! I love coconut, and this was a treat, and smelled so good as it was baking. And my toughest critics (my kids) just inhale this. Can't wait to try the coconut silk pie!

I love coconut, too. I like to keep a can of coconut milk on hand for chicken curry. I use chicken, unsweetened coconut, coconut milk, zuccini, onions, red peppers, curry, various spices and a can of rotel, plus some half and half and a little xantham gum to thicken slightly. Very yummy!
