What???

I would check your sources, because that is simply not right. It has tons of other "nasties" like nitrates and other preservatives, but it is essentially carb-free.

I love a good corned beef every once in awhile. Did you perhaps look at Rueben Sandwich instead? That would account for the high carb count!!!!

Now, I did make some hash the last time I cooked a corned beef. I used cauliflower in place of the potatoes in with some left over corned beef, and cracked pepper.

Precook the cauli on the stove or the microwave. Drain and chop up. Add to frying pan and brown. Then add chopped beef and heat. It does not have the same heavy feeling that canned hash has.

A very good substitute, and a little lighter at that.

You can also do this with raost beef for another hash flavor.
