| Does anyone have a LC recipe for meatloaf? My dad is dying to eat meatloaf, and I don't know how to make it low carb. Started 12/19/2003 161/148/130 140 by Easter Crying may last for a night, but joy comes in the morning. Psalm 30:5 |

| 2 lbs. ground beef 1 1/2 cups spicy pork rinds (finely crushed) 2 eggs 1 small green pepper, chopped (optional) 1/4 cup water 1 cup Pasta Sauce 1 cup shredded mozzarella cheese Preheat oven to 350 degrees F. In a large bowl combine all ingredients except 1/2 cup Sauce and 1/2 cup cheese. In a 9x13 baking dish, shape into loaf. Top with remaining Sauce. Bake uncovered for 1 hour. Sprinkle top with remaining 1/2 cup cheese. Bake an additional 10 minutes. Let it stand for 10 minutes before serving This is one that I found under recipes on this website. Tried it last week and it turned out really well. I put a couple of servings in the freezer and had one for lunch today. So it freezes well too. 320/289/150 Started Atkins 1-19-04 |

| Here's mine: 2 lbs. ground beef 1 lb. Italian sausage 1/2 cup flax meal 2 eggs 2 T. worcestershire sauce 1/4 cup minced onion 1 tsp. minced garlic Seasonings to taste - I like Italian, a little garlic salt, and a little chili powder Mix all together well, using hands. Shape into loaf or pack into 2 loaf pans, then turn out onto broiler rack - line bottom of pan with foil to cut down on cleanup. The broiler rack lets the fat run off. Bake in 350* oven til 160* when tested with thermometer. Let rest 10 minutes before cooking. Serve with salsa, chow chow, low carb ketchup, mustard, or whatever you like! Plenty left over for sandwiches too...love the Oroweat low carb bread.... Char Being "over the hill" is much better than being under it.... |

| My family loves this: 2-3 lbs. ground beef part of a pkg. of onion soup mix (or all if very few carbs!) 1/2 cup salsa Mix together and bake!! ~Jan 247/228/130ish? | Making LC meatloaf tonight for supper. Added jalapeno peppers, 2 eggs, and used one slice of LC bread, toasted and crumbled (like bread crumbs). Then added garlic pepper, salt and pepper (all I had in the cupboard to season). Will let you know how it turns out. |

| I never make meatloaf, but these sound good. I like the idea of using flax meal instead of crumbs. |

| Never ever ever try it with LC bread. ![]() Looked like a science experiment when it was done. |

| Try using Almond Flour in place of breadcrumbs or pork rinds. I do that and it's really good. |
