Today was the first time I attempted to make something other than eggs for breakfast
I made a portion of pork rind pancakes and a cream cheese version. I used extra large eggs so I think that made my batter too runny. Anyone have a fool-proof recipe? The cream cheese ones tasted much better than the pork rind version but they had the right texture.

Renee,
My favorite all time, hands down, winner for pancakes is a recipe called "Real Pancakes".
You can find it on this site, on page 2, the last recipe under breakfast...then pancakes.
It has never failed for me Also, I add a hearty dash of cinnamon and a tsp of vanilla, and they taste just like cinnamon toast pancakes especially topped with sf davinci's french vanilla syrup.

Personally, I LOVE the flax meal pancakes. They are awesome.

I take one tablespoon of flax seed with some cinnamon powder and grind it in my coffee grinder to a powder. I mix it with one egg and one tablespoon of sour cream. Then I fry it in butter. I serve it with a dipping sauce of melted butter and Atkins maple syrup.

Flax seed is so good for you and these are incredibly delicious.

I'm with Shelley on the "Real Pancakes". They taste so close to the real thing. I have never tried the pork rind pancakes because I watch my salt.
