Does anyone have a copy of the cheesecake Dr. A had in his book from the '70's? I loved it. It was so basic and easy!

From Atkin's 1972 book.

Cheesecake
(Serves 12)

¼ cup Heavy Cream
8 oz. Tem-Tee shipped cream cheese
1½ envelopes unflavored gelatin
¼ cup cold water
2 eggs at room temperature, separated
3 tablespoons vanilla
¼ lemon – juice and grated rind
6 teaspoons of Sugar Twin
¾ cup heavy cream
Cinnamon
Pam Spray

Combine the ¼ cup cream and cream cheese in a saucepan. Cook over low heat until the cheese is melted. Sprinkle the gelatin over cold water. Add to cheese mixture.

Stir with a wire wisk until it begins to boil, remove from heat, cool.

Add egg yolks, vanilla, lemon juice and rind, and 4 teaspoons of Sugar Twin.
Whip ¾ cup of cream with 1 teaspoon of Sugar Twin. Beat the egg whites with 1 teaspoon of Sugar Twin. Fold whipped cream and egg whites into cool cheese mixture. Sprinkle with cinnamon.
Spray loaf pan with Pan. Pour mixture into loaf pan and refrigerate.

Total Grams: 35.3
Grams per serving: 3.0

Thanks for the recipe. I remember eating this often back when the 1972 book came out. I wish I hadn't sold that book at a garage sale!

What is Tem Tem Cream Cheese? I was born in 1980, so I don't know the original recipe Can we use regular cream cheese? Thanks!

TemTee was a brand of whipped cream cheese. I imagine any whipped cream cheese would work as well.

I think that any whipped cream cheese would work also. I did pick up the ingrediants that I would need to make it, but I got regular cream cheese and will be whipping it myself in the mixer.

It might be next weekend until I get to it.

Hi, I bought all the ingredients to make a cheese cake and then my daughter who works at Albertson's grocery said they had a low carb frozen cheese cake there...I asked her what it cost and she siad about the same as other cheese cakes!

She was mistaken...it was $20.79 for a lousy cheese cake!

I think I can make my own thanks!
