maggie's mashed fauxtatos - couple of questions!

hi there,
well i just made the mashed cauli for the first time last nite! i have been doing atkins for over 2 months ... don't know what took me so long to try it! SO GOOD!
i made it w/ bacon and cheese, baked a little.

couple of questions:
1) i microwaved the cauliflower pieces (of one whole head) ... but it took FOREVER to get nice and soft! like 15 minutes in the micro! is that normal?
2) what's the nutritional info?
we had it for dinner last nite w/ burgers (my boyfriend and me) ... and we had about half the casserole. and i finished it this morning for breakfast. think i may have overdone it on carbs and calories for one meal.
can anyone help?

Hi!

I haven't tried that recipe yet it sounds really good -- May be on the menu to go with tonight's steaks!

I find fresh cauliflower cooks better if you steam it vs. using the micro.

Another recipe to try is the Mock Potato Casserole (under recipes "Soups Stews & Casseroles" on page 2). This is yummy too!

Hi CJ –

If you’re talking about my recipe which Sharron has linked above, then yes, it does take a long time to cook because the heads are very dense.

You mentioned only 1 head of cauliflower, the recipe calls for 2 unless you find one head that’s really big. If you only use 1 head it might be too loose and runny but I’ll leave that to your taste. Some people prefer it that way. I like mine a little thicker.

The carbs are hard to estimate unless you weigh all the cauliflower before making the dish so you know exactly how much is in there. The USDA says 1 large head (about 7” diameter) has about 20 grams net. So, that plus the cream cheese and brie would mean the entire casserole you made probably had about 25-28 carbs. If you made 4 servings out of it, that would be roughly 6-7 carbs per serving.

Hi!

If you were making my recipe for Mashed Fauxtatoes from our Recipe Section (which is here) I use one medium head of cauliflower. It makes 4 nice servings and each serving is about 4.5 gms each. (I just edited it to include that information. Broke my own "rule" on that one by forgetting to include it! )

I often do my cauliflower in the microwave by rinsing it and shaking off the extra water, then cutting it up and putting it in a pyrex bowl with a top. It doesn't usually take me 15 minutes to get it soft - often only 5 minutes or so, but then I have a high powered microwave.

Well, there you go! It was Maggie's recipe afterall.

I always use the microwave too. I like how it comes out drier so the final product isn't so runny.
