Rainy weather has me pulling out one of my containers of chili from the freezer --- nice and warm inside now. Will have a few raw veggies with ranch dip in a bit to get some more veggies in today.

You are welcome, Monterey Chicken is a favorite. This is what we're having tonight.

Mediterranean Crusted Chicken

1 egg
1/2 cup heavy whipping cream
1/2 cup almond flour
1/2 cup Chefs blend flour or Atkins bake mix
1/2 cup grated Parmesan cheese
4 tablespoons chopped fresh basil
1 tablespoon garlic powder
salt and pepper to taste
2 pounds skinless chicken thighs
1/2 cup olive oil

1 Preheat oven to 400°

2 In a medium bowl, combine the egg and heavy cream and beat together well. In a separate medium bowl, combine the “flours”, cheese, basil, garlic powder and salt and pepper to taste.

3 Rinse chicken and pat dry. Dip each piece into the egg wash and then dredge liberally in the “flour” mixture. Heat the olive oil in a large skillet over medium high heat. Fry the chicken in the oil for 3 minutes per side, or until both sides are golden brown and crusty. Place chicken in a 9x13 baking pan and cover with foil.

4 Bake, covered, at 400° for 10 minutes, then remove foil and bake, uncovered, for 10 to 15 more minutes, or until chicken juices run clear.

OH MY GOSH, put the chicken back in the freezer, I forgot it was St.Patrick's day!

It'll be corned beef and cabbage here tonight as well.

Wednesdays are "work late day" for me, which also means it's "go out to dinner day" too!

I intend to have a Stoli Raspberry on the rocks, a nice dinner salad with feta cheese and vinaigrette, seared rare ahi tuna with lightly steamed asparagus spears, and a decaf coffee with cream for dessert.

AND I CAN'T WAIT!!

My Dad is cooking corned beef for us on Saturday so we will have a slightly belated St. Paddy's Day celebration.

Steamed cauliflower with garlic butter
Mixed green salad

Leftover Chocolate decadence cake with sliced strawberries from hubby's bday for a treat later

is it aginst the food laws to eat corned beef and cabbage if its not ST. patty day??? lol.. if i told someone i was haveing that any other day threw they year i would get a funny look.. or even A reuben sandwich.. so many people wrinkle their nose up.. but i think tommrow i will take one of my NEW.. lc tortila wraps and make a reubein roll up.. mmmm i havent had a reuben since this WOE... hubby hates cabbage so i end up eating any thing i make w/ it in all my self.. blah.. to much is to much..

tonight its a toss up since i found LC tortilas at the grocrie store we might do mexican.. but i was going to have home made beef stroganof LC. w/ pasta for the men of the house... and me .. either LC pasta or just searved w/ steamed veggies.. and a salad..

I have a turkey I bought on sale in the oven right now. We will have it with a big mixed greens salad, baked green beans with garlic butter and caulimash.

I broke down and bought the Atkins corn bread mix, but I have never tasted it, so I'm not sure if I will make that for DH or not. I don't like corn bread all that much, but DH LOVES it. It it the one thing he really misses about low carb. I bought it as a suprise.
Has anyone tried it? Is is good?

Jen, I thought the cornbread was very good, albeit a little "pricey" carbs-wise - we have been using the CarbSense mix instead, it's much lower in carbs. Both are good though!

We're having leftover turkey breast, a big green "kitchen sink" salad (what I call a salad with everything BUT the kitchen sink thrown in!) and probably some cauliflower with cheese sauce, if it's not too hot to make it!

Just went shopping...so I think I'll cook a bunch of stuff for the week.

Lamb patties w/rosemary, roasted in oven
pork chops w/walden farms bbq sauce
natural casing hot dogs (CRAVING!!)
buffalo burger patties
cauli mash
spinach sauteed in butter and garlic

Also just got back from store with a roast for crockpot tomorrow.

Just took dinner out of the oven...Buffalo Chicken Drumstix...man do they smell good.
Also made some fauxtato salad for me, and green pea salad for DH. Will dip a little of the Carb Options BBQ sauce, maybe.

DH went to the store today--- there were two drawers full of fresh veggies. We had a BIG salad!
