What are you cooking for supper tonight?

I'm getting tired of the same old thing. I'd like some new ideas.

I'll start.

Baked Monterey Chicken

4 boneless, skinless chicken breast halves
1 (8 ounce) package sliced fresh mushrooms
1 can chopped green chili peppers
4 ounces Monterey Jack cheese
Italian dressing
1/2 teaspoon garlic salt
salt

1. Preheat oven to 400°
2. Marinate chicken in Italian Dressing for a minimum of 30 minutes.
3. Place chicken in a 9 x 13 inch baking dish. and bake in preheated oven for approximately 25 minutes, or until no longer pink in center and juices run clear.
4. Shortly before chicken is done, melt butter in a skillet over medium heat until bubbling, stir in mushrooms. Reduce heat and cook until mushrooms are tender, about 3 to 5 minutes. Adjust seasoning with salt as needed.
5. Remove chicken from the oven. Lay green chilies on top of each breast, then top each with a slice of cheese. Return to the oven until cheese has melted.
6. Remove chicken from the oven, top with mushrooms and their pan juices, and serve.

Turkey Joes (sloppy joes made with ground turkey), 1 slice of low carb bread, cheese, and large tossed salad. Cucumbers with sourcream.
might have some yougart and fruit, but that will probably be enough for me.

prolly wings and salad as I have to go out t'nite

Made salsa chicken last nite

4 chicken breast halves
1 jar salsa (find lowest carb count one)
Shredded cheddar cheese

Bake Chicken covered in salsa at 350 for 30 mins. I personally scrape off the salsa resting on top before adding cheese to melt in oven. (gives salsa flavor without the carb count)

i had a steak.. (yeah same old) a serving of shrimp scampie, salad and a few cold green beans. i did sneak 1or two of my son's pop corn shrimp beacuse my other (little toddler) was sneaking scampi off of my plate. i guess we shared food.. but i think that those 2 little pop corn shrimp at most will just throw me out of ketosis if that.. beacuse i had a little splurge the other day and still in ketosis.. i guess i was just lucky we shal see...

I'm probly haveing country style chicken tommrow w/ steamed veggies and left over cheesey rice aflower w/ some cabage tossed in for moer bang for my buck.

wed, no clue .. work so probly burger pattie and a salad,
thursday, maby spag squash (going to try and come up w/ something diffrent.. maby a pesto sauce on it..(rest of family w/ have regular pasta..)
friday fish, and stir fry veggies..

and how do i come up w/ all of these.. LOTS OF THOUGHT..

Had a leg of lamb steak fried with rosemary and garlic and green beans alfredo with mushrooms and toasted seasoned pecan slivers. some strawberries and cream for dessert.

Betty, that Monterey Chicken sounds divine! I'll have to try that one. DH loves anything with those Ortega chilies....

Are we gonna keep this going today? Since the weather has been high 70's/low 80's lately, cool stuff has been on the menu - tonight, leftover turkey breast sandwiches on O'SoLo onion rollz and a nice green side salad full of goodies like radishes, green onion, hearts of palm, red bell pepper, and homemade vinaigrette - probably throw a few Trader Joe's LC Nacho Triangles on the plate too! Maybe even a low-carb Miller Lite beer....

Rob, what time is dinner?

Tonight we're having sesame seared salmon with a drizzle of toasted sesame oil and broccoli w/ butter. Yummy! I just love the salmon made that way.
