Thread: New recipie that someone threw in my lap... loving it!

    So I was starting to get a bit bored.... so I went in search of new things to eat on LCL... and someone on another network emailed me this...

    1.5 # ground beef (extra lean when I make it)
    1/2 Tbs Minced Garlic
    1 Cup Shredded "Mexican" cheese
    2 tamales finely chopped
    2 red pepper split into halves

    It's stuffed peppers without the breadcrumbs and the carbs! You just mix it all together and throw a bit of water or chicken broth(LC of course) on the stuffed ppeppers and in the pan. It's delightful, but not for the faint of heart.... SPICY! BE WARNED!

    I'd have to say that I put them in the oven at 350* for about 45 minutes.... the time is all going to depend on when the meats cooked all the way through. I left mine in for about 45 and they were done so I pulled em out.

    If you would prefer the red peppers to be "softer" when you are eating it... you can always preboil them for about a minute each in hot water. Although some people do this, mine were nice and soft, not soggy, but soft after the 45 minutes.

    I LOVE YOU!! I was just bought some peppers and was looking for a good stuffed pepper recipie! I'm going to try it tonight! Thanks! I'll let you know how i like it.

    No problem Emily!!! That's what we and the board are for. I just really liked it cause I LOVE spicy food and trust me.. this was SPICY... possibly I might consider "HOT"! Good luck and hope you like it@!

    I did something very similar to this last week. My stuffed pepper recipie ad rice in it, but I replaced it with some cooked cauliflower.

    I did notice that you need to mince the cf into small pieces to give it a better texture, but overall I was satisfied and had them for a few days.

    two tamales?? finely chopped?? what kind of tamales?? and wasnt the cornmeal surrounding the tamales kinda high carb? so lost....

    i might try that with two JALAPENOS... or are tamales some kind of spicy OTHER thing than what i call tamales (shredded beef in cornmeal masa covered with a cornhusk and steamed)
    i USED to live in arizona.. loved the tamales homemade down there... up here in the idaho panhandle .. uh.. lets just say that GREAT mexican food is hard to find

    Here's the deal with tamales... it's not what you are thinking... it's another type of hot peppers...very much like jalepenos.. you might try those if you can't find tamales in your store.

    ah HA! i KNEW it couldnt be the tamales I was thinking of... thanks.. all i could think was .."why would ANYONE want to ruin a YUMMY tamale like that.." *L*
    i guess i will have to do it with jalapenos.. my fave anywho!THANKS!

    If you only used 1/2 a jalepeno, would it still be good but just not so hot? Sounds delicious except for the "heat". Can't handle so much.
