Cornbread

"Low Carb Cooking" at Low Carb Diet Support: "Tried the CarbSense cornbread mix today. Instead of the eggs, I added Southwestern egg beaters. Yummy -- tastes kinda like Mexican cornbread. Added a nice touch. Very low carb and filling... Good one!...."

We liked that mix also. Good idea on the southwestern eggbeaters!

CarbSense makes some pretty good mixes. We also really like the Buttery Biscuit one.

I have that one in my pantry, but have not fixed them yet. I have made the chocolate cake one and it is delicious with just a little bit of WaldenFarms carb free chocolate syrup.

I have a low carb store that I get it at that is called WeightToGo. Not sure about health food stores; maybe someone else will have some suggestions. Also, CarbSense has a website that you can order from.

Some of my local stores carry the CarbSense but it's too expensive - I buy it from thebetterhealthstore.com - their mixes are usually pretty inexpensive, comparatively speaking! Sometimes they're out of stock on some items, so I end up going to n101.com which also has a discount on some things when you buy them in quantities of like 3 or more.

Thanks for the thumbs up on these...I often hesitate to try these mixes!

Also, Charski, just had to tell you thanks for your pancake recipe...I've been using it ever since that pancake thread! They are excellent!! I especially love adding my frozen blueberries too!!

I made the Atkins cornbread one time, it wasn't bad at all. Has anyone tried both, if so, which is best?

I've tried both and I prefer Atkins. Especially now that I found some cheaper places online to get the mix.

I am amazed at carbsense -- I have tried their pie crust (not bad!), carrot cake (yummy), and their apple cinnamon granola -- (oh my!)

A member of another forum emailed Carbsense about their calorie count on the nutritional label - it didn't jive with Fitday. Anyway, she got an immediate, detailed and very honest response back from Carbsense -- I think they are trustworthy and their products are great. They are reformulating the muffin mix to eliminate use of maltitol since maltitol is believed to raise blood sugars.

I get mine at super wal-mart -- decent prices, a lot better than the health food store.

I've tried both also, and I prefer the CarbSense! Taste preferences differ so much, don't they?

I especially like that they are really low-carb compared to the Atkinsn which are I believe 9 grams per muffin.

The CarbSense are a darker color, not as "cornbread looking" as the Atkins, but that's OK by me!

I bought the Atkins mix a few days ago, but haven't tried it as a muffin yet. I did however make zucchini pancakes and used a few tablespoons dry mix as the binder. They were heavenly! I will make the corn bread muffins this weekend when DH makes chili..yum!

Can you find Carbsense mixes at the regular Walmart, or just the super centers? We don't have a SC here in Dayton yet. Supossed to get one in the next few years though...
