Your welcome, and I agree.

This was the first of her recipes that I've used, but if these muffins are any indication of how good the rest of the recipes are I'll be using this site quiet often myself.

Those look really good--I love bran muffins, and it says they taste similar. I'll have to try them.

I made the these muffins again this morning and used SF chocolate syrup, 2 tablespoons of cocoa instead of cinnamon and added a tablespoon of SteviaPlus.

They were very good, I barely got one of them, the kids ate them all.

I think I'll try gingerbread next.

This is quickly becoming one of my favorite recipes.

By the way, I think my muffin tin must be larger than the one she was using, I never get more than 9 muffins, but as low carb as they are, who cares.

I made these today, too. Pretty good all in all. I used English Toffee LC syrup, but think I'll use my gingerbread flavoring next time. Or I might add some nutmeg with the cinnamon.

I got ten from the recipe--did ten on purpose so I could do the math easier when I figured out the nutrition info. I didn't count the baking soda or powder or vanilla. Each muffin has 143 calories, 13 grams of fat, 4 protein, and 3 carbs, with just about 3 grams of fiber. They were very filling, too. They'd be really good for breakfast.

I liked how easy they were to make, too.

I think the recipe needs a pinch of salt, too. I'll try it next time.

I also had some ideas about nuts and toppings.

I can't find the brown sugar syrup in my area, can I just use splenda and vanilla?

Renee-
If you can find the vanilla sf syrup just use that, if you can't find vanilla syrup, can you find Stevia Plus? You could use Stevia Plus and water.

If you use Splenda it will add carbs, there are 24g of carbs in each cup of Splenda, but if that's not a problem then yes, you could use Splenda.

You can make other flavorers besides just cinnamon, I made chocolate yesterday and I think they are better than the cinnamon. The cinnamon was a little strong for my taste. I used Atkins chocolate syrup, 1 tablespoon of Stevia Plus and 2 tablespoons of cocoa powder, everything else is the same.

I get my Stevia Plus at Kroger, if you have one in your area check it out. The one here carries a large selection of low carb foods. They also carry the sf syrups in several flavorers.

Also my muffin tins are dark so I decreased the oven temp. to 325°.

I made them again tonight with two T cocoa and chocolate LC syrup. I added three packets of Splenda because I didn't want them to be bitter. Also 1/8 tsp of salt, which I think made a big difference. The muffins were really good; even my son liked them. They didn't taste really chocolatey, but yummy.
