zucchini apple pie

"Low Carb Cooking" at Low Carb Diet Support: "OMG i just rembered i had this recpie... it is for a zuchini apple pie.. (it uses zuchini instead of apples...and when someone brought it to work i tried it and couldnt tell it wasnt ...."

OMG i just rembered i had this recpie... it is for a zuchini apple pie.. (it uses zuchini instead of apples...and when someone brought it to work i tried it and couldnt tell it wasnt apples till way after they had told me.. i had to retry it agin...)
this hit me like a brick wall this was so delicious... im sure if you sub the suggar for splenda... and use a thickner instead of flower for filling THIS WOULD BE WONDERFULL!!! that and you would have to find a LC pie crust type thing this is just the filling


Zucchini apple pie 6 cup zucchini
3 T lemon juice
4 T flour
1 1/4 cup suggar -(splenda)
2t cinnamon
1 1/2 T cream of tartar
dash of salt
dash of nutmeg

Peeol, remove seeds, slice and cook zucchini until tender. Toss with lemon juice and salt. Mix flour, suggar (splenda), spices and cream of tartar. Add zucchini. It will be runny. Pour into an unbaked pieshell and dot w/ butter. Add top crust or use crumb topping ( No need to dot w/ butter if useing crumb topping) .
Bake at 400 for 40 min.. or until golden brown..

Crumb topping

(you will have to alter this recpie to be LC...)
1/2 c flour
1 t cinnamon
1/2 cup suggar
1/4 cup margarine or butter...

comvine flour, suggar and cinnamon. Cut in margarine. sprinkle on top.

I can not stress how this taste just as good as apple pie.. i had this last summer befor i started this WOL... and i thought it was apple pie... i can't belive it took me till now to find this recpie agin.. ohhh summer come soon so i can have some fresh garden zucchini

I remember something similar to this from my WW days!

I bet it you used almond meal instead of flour in the topping and cooked it like a crisp instead of worrying about a bottom crust - you could just call it "mock apple crisp" and have yourself a yummy dessert!

I'll have to try it myself.

Thats what I was thinking, a mock apple crisp. I have always been partial to crisp over pie, be it apple, cherry, or peach. I think I will try this recipe, it really sounds good. thanks for posting it...

I think i will buy a zucchini and try and make at least a single serving of a "crisp" form of this some time this week.. and i will enter it in to fitday.. and see what i come out w/... will be intersting to see if i can break it down to a single serving.. lol...
if anyone makes this lemme know what ya think... beacuse i was so excited when i found my recpie for it over the weeknd.. beacuse i remberd that i couldnt even tell that it was made w/ zucchini instead of apples... i love when things like that happen..

OHH and i just had an idea.. i can make this for Easter Sunday so i can have a desert too!!!!!! woohoooooo...

I made the "apple" crisp for supper tonight to go with our pork chops and it was delicious, this is the topping recipe I used. I will definitely be making this again.

Zucchini Apple Crisp

6 cups zucchini-11.4g
3 T. lemon juice-3.7
1/3 cup chefs blend flour-5.33
1 cup Splenda-24g
1 T. SteviaPlus-0g
2 t. cinnamon-1g
3 T. butter-0g
dash of salt
dash of nutmeg

Peel, remove seeds, slice and cook zucchini until tender.
Toss with lemon juice and salt. Mix flour, sugar (Splenda), spices and cream of tartar. Add zucchini, it will be runny. Pour into a 9” square pan and dot w/ butter. Add crumb topping
Bake at 400 for 40 min.. or until golden brown..

Crumb topping

1 c. Chefs blend flour-16g
1/2 c. almond flour-6g
1/4 c. oats-13.6g
2 t. cinnamon-1g
1/2 c. Splenda-12g
1 T. SteviaPlus-0g
1 T. molasses-13.8g
1/3 c. butter cut into small chunks-0g

Combine all ingredients in mixer bowl, turn mixer on low and let it run until the butter is cut in and the mixture resembles a course meal. Sprinkle it over the zucchini and bake.

Carb count for the whole thing is-107.83g of carbs
Divided by 9 servings it is-12g of carbs per serving

Fried "apples" and that's just what I'm gonna do. I'm stopping at the market tomorrow, picking up small zukes and making them Wednesday on my day off.

I will post how they turn out. Thanks Gilley, for this idea.

I bought some sugar-free cider mix (Alpine brand) in the supermarket. It has 4 carbs per packet, and is sweetened with aspartame (so I use it with caution; I get migraines from too much of that stuff).

But, I made fried "apples" with it, using the filling part of the recipe from the website you posted, biddy, and served them with grilled pork chops. Tasted amazingly like apples! Zucchini is 4 carbs per cup, and I used 3 cups (cut into little half-moons to look more like apples), so the whole recipe had 16 carbs, or 4 per serving.

OK, dumb question of the day, what is a fried apple?

I've had fried apple fritters, and apple fried pie, but I'm guessing this is not the same thing.

Betty, fried apples are...well...just that. You peel and slice the apples; melt butter in skillet and add the apples. Put cinnamon and sugar in to taste and fry them. They are wonderful!

BTW, I did get my zukes at Kroger today so I'm all set for tomorrow.

I was just wondering Kumus if your apples turned out... i tried makeing the crisp in a hurry yesterday befor work... BIG MISTAKE... i think i over salted... i took one bite and thrrew it out .. if i can taste salt in something "sweet" i can't eat it.. unless it is a cho, coverd pretzel.. then that is an exception..
